The chat about Tribal People Try carrot cake reminded me of the time that I volunteered at a massive Christmas dinner for anyone in our town who would otherwise be alone on Christmas Day. We had a great diversity of attendees, but a large portion of them were international students, refugees and migrants from backgrounds who had never celebrated Christmas before. Every aspect of the traditional British Christmas dinner was absolutely baffling to them, it was a hilarious way to break the ice! One guy took one look at the cranberry sauce and said 'why must you have jam with your food?!' and don't get me started on what happened when it was time to pull the Christmas crackers. All the British people dutifully criss-crossed their arms like it was the most natural thing in the world, whilst everyone else looked at us like we had six heads. Then we actually pulled the damn things and some people literally screamed in shock at the noise 😅 Jamie's right - often it does take 'outsiders' looking in on our culture for us to realise just how strange we are!

I'm an old white man from Wisconsin. I lived in China for six years, and had to adapt to the local culture. But, working as a "how to interact with westerners" consultant (including EFL, customs & protocol, CSR, etc.) a large part of my job was exposing my clients to "the way we actually do things". One evening I invited my Chinese colleagues over to my (very tiny) apartment for jambalaya (and assorted sides). They enjoyed the food (though my Sichuan boss thought it was spicy!), and were interested in the culture surrounding it. And then I noticed that 3 of them were missing. The entire apartment consisted of 4 rooms: Living and bed (separated by a sliding glass wall), bath, and kitchen. I walked into the kitchen and found the three doing dishes. My (now former) boss--owner of the company--still, to this day, brings up the day I told her to "get out of my kitchen! Guests DO NOT do dishes!" :)

I'm in America and used to work at a discount store that would get various international items sometimes like snacks & sweets from Asia & Europe, though we mostly sold clothes & home goods. I grew up watching lots of British television (in the 90s American public access channels had a lot of older BBC shows I guess they were cheap to license) so I knew what Christmas crackers were when we got some in years ago and I just had to buy a box. A couple years later I introduced them to my boyfriend & his family and now we do some every year at Christmas dinner. My boyfriend's head is a bit too big for the paper crown, sadly. Now sometimes Target sells them but they're hard to find and don't seem to have caught on much in America, last year we ordered some from Amazon.

I'm excited to hear about Barry getting to do a course like that. What he said about photography honestly reminded me of things James used to say during challenges. Admitting that many of the things he was doing weren't DIFFICULT, it was just knowing what to do in the situation. So many points where Jamie or Mike would say "I never would've thought to do that," but fewer where they'd say "I could never do that." Same with photography. At least to a point, it's knowing what tools you have and which you should use in a situation.

These pastries definitely look like they were made for the TikTok factor. I want an airy croissant, not a brioche; what's the point of all that lamination if it's just going to collapse on itself? The amount of chocolate in the pain au chocolat also looked incredibly underwhelming. If I wanted to get pastries for 5 of my mates and myself, I'd rather just get 6 individual croissants, and would probably be spending less, too.

The over proofing is just lack of care. The lamination failing due to the weight of the thing is something they would have known after they made the first one and they kept on making them. That says to me this is nothing but advertising. They are very cynically trying to draw in people who know nothing about pastry and just want the thing they saw on TikTok. Based on that alone I'd never spend a penny there and hope they go out of business very quickly. I'd much rather spend my money on a true artisan who cares about producing quality products.

Dane here. My Mexican lasagne is all store bought items. 1 pack of tortillas. 400-500g of minced meat, beef or beef and pork. 2 glass of salsas. 1 cheese souse. Grated cheese and jalapeños as toppings. Brown the meat then add the two salsas in the pot and half the cheese souse, season with salt and pepper. When it boil then layer it in a tray. Meat sause, cheese sause and tortilla. Do that for a minimum of 3 layers and add the topping and into a oven on 200C for 30 mins. Pro tip, poke holes in the tortillas, when the sauses start to boil then the steam needs to escape, just poke a knife through the stacks. It is super simple and makes no mess, great if you feel lazy and need to feed 4 people.

Add in ginger juice to the mixture, and whisk again. Strain into bowls/ramekins, and cover each bowl/ramekin with aluminum foil. Prepare a steamer over medium heat. Steam the custard mixture until firm and fully cooked. About 20-25 minutes, but the steaming time depends on the bowl/ramekin you are using, so please check starting at around 15 minutes.

A note for batch cocktail making - dilute with water (or ice) as you scale the recipe up. Shaking a cocktail adds a fair amount of water into the drink to help balance it out, it's very important. Probably less of an issue in this one given the ice and pineapple, but still worth considering if you ever make a drink for more than 2 people at a time.

I never had a name for it, but I make something very similar to this Pastel Azteca on the regular. My family adores it. I agree that making your own salsa verde is a huge game changer, but on days when I'm in a rush or just need the comfort food, a good quality jarred salsa verde works, too. I do make my own, and can it for the winter when I can find fresh tomatillos at the farmers market. With Ebbers love of his garden, no reason he couldn't grow tomatillos. If he can grow tomatoes, tomatillos should be a breeze. My method for salsa verde is super simple and entirely by feel, so every batch comes out a bit different depending on what looked good at the market - husk the tomatillos, quarter the onions, leave the peppers whole (I prefer poblano, but anaheims work, any green pepper that has a bit of a bite to it will), jalapeno, garlic, and a halved lime. Roast it off until you see a fair amount of char on the peppers and onions (use a lipped pan for the tomatillos). Let it cool and destem/deseed the peppers. Put everything in the blender with some cilantro, and fresh lime juice, plenty of salt. Adjust your seasoning to taste. I usually make it fairly mild because I have kids, but some batches are hotter than others, and they're all incredible. This can go in a water bath canner, or it can be frozen.

My issue is that the proportion of crust to inner crumb is completely off when it's this size. The regular sized croissant as we normally experience it has a higher ratio of crispy crust to inside part.

And notice that the one Tribal People Try guy is (somewhat) famously a doppelgänger for Harrison Ford - so much so that I can’t unsee it!

Tribal People Try do have videos of their local foods and cooking. They have a few different channels now. I believe income earned is split between producers and staff. Their lives and family's have dramatically improved directly due to this endeavor! About a month ago,KZbin censured or flagged them or something and they made a video talking about the impact these channels income have made for them. It was quickly cleared up.

Herdez brand salsa verde is pretty good if you can't find the ingredients to make it yourself, or just want a quick mid week meal. I always keep a couple cans of it in my pantry.

Salsa verde is definitely something to add to your Mexican/TexMex repertoire. Tomatillos are in every grocery store here in Texas, but for salsa verde, you can substitute canned. If you can get canned fire roasted tomatillos, all the better. I don't think you can roast the canned ones -- too wet. It's easy to make.

Here’s what I think you should do. Create a round robin of various countries, trying various other countries foods, and if you do it on TikTok, you just create a bunch of videos, offering up something British for them to try, and inviting them to make a response video where they try your food, and then they offer up something in return. And then call it something like “international food tryout”

That last one is similar to one my parents made all the time and I still do, I just use beef and cream of mushroom soup as the base, fresh veggies and hatch chilis, and flour tortillas. Stacks up similarly and just a hearty dish.

Thanks for introducing me to the Pastel Azteca. I cooked it after a little research, and it is every bit as good as the video suggests. Anything made with home made tomatillo salsa is going to be good.

Tribal People Try have a cookbook of recipes from their country, recently released. They are inviting people to make the recipes and then film a reaction of them trying it and send it in for a collab....You guys should totally do that!
