I love Burkina and i love Zongo communties. The overnight process is effectively turning all the milk in to yogurt. The small amount of yogurt added was to introduce the 'culture' which will mutiply (hence keeping it warm) and turn all the milk in to yogurt. Similar to how we activate yeast the culture is live and needs warmth to feed and multiply Ice cold burkina is just sooo delicious !

Tnx Sindaco, I love n make my own Degue. Some points of clarification if u don't mind pls: -The whisking of de milk powder n adding yogurt(as Culture) etc is their way of making Natural Yogurt so u can skip that if you can access yogurt. -The millet requires steam to cook so the pot is sealed to trap all de vapour, prevent the vapour from escaping. You can use a Steamer if u hv one or the Pot used by de Eʋes to cook 'Yakayake/Yakayaka'. I use de Microwave so the entire process takes about 1hour from start to finish 😜

My fellow longer throat community here how we can achieve this while abroad and unable to follow all these complicated steps steps. Get yourself some good yogurt from the store some vanilla flavor. If you have heavy cream to add fine if not its ok. Go to any international market, african market or amazon and buy the already processed dried degue. Some times differents names like thiakri or steamed millet grainis given to it. But it should look like what the lady steamed. Brown dry and round. Follow the soaking directions by adding only hot water and let it sit well covered for maybe 35minutes. It should be nice and soft. Use it to mix with your yogurt vanilla and sugar. Et voila......it is not as perfect as what the lady did but that is what we manage with when abroad and it taste very very good. By the way I am from Burkina and I am in love with Ghana and my Ghanaians family...peace and love....

This gentleman is trying to do something very good. I like the whole concept. But lot of research has to be done before the start of the program. You can make yogurt without powdered milk. The Burkina came out nice paaa, they are really good.

I always ask them questions for them to answer to confirm and if you listen to the conversation, I asked about yogurt and normal milk not powdered and again she gave her reasons... and one thing is that I can't challenge her/them on camera that what she's saying is wrong. If I do that no one will cook with me again 😁😁😁
