Hi Joey, I save all the cuttings from the veggies in the freezer until I have enough to make a vegie broth. The bottoms of the green onions in water grows new greens too. You may already be aware, but just in case. Thank you for sharing your prep with us!

I am watching this a few months after it was posted, but I'm impressed! I am also a teacher. Teaching takes so much of our time and energy. It's fantastic to see these men working together for each other and their child to provide such healthy food. And not only that, they are also sharing it with all of us on KZbin. Joey, thank you so much for the refried bean recipe. I NEVER thought you could make a good Mexican refried bean recipe without bacon grease! I was WRONG!!! The spice combination is superb. I mean just superb. I skipped the saute, at the beginning with the onions and garlic. I just threw everything into the pot and followed your directions, from that point. We like stuff a bit spicy, so we added two cans of the chilies. That amount was perfect for us. You really did not need to saute the onions/garlic, I found. I removed one cup of the liquid and got my boat motor out to make the refried beans and I had soup! Too much liquid. Next time I will know better and I should have separated the liquid and the beans, adding in just what they needed, for the consistency to be correct. HOWEVER…..what a great mistake I made. I had bean soup. It was the best, and I mean the best, bean soup I have ever had. You could serve that in a restaurant. The spice panel was so terrific that it was excellent. The beans didn’t need anything. Sometime, try this recipe for a soup. Had we had cilantro, it would have made me cry, it would have been so good. You know all the beans that preppers are putting away? Well they need this recipe. It does double duty and is the best. Thank you, again, Joey. I hope you are feeling better, after surgery. Next, I am going to try your Ranch Beans. I get a little excited about food--bet you couldn’t tell!😜. I felt so bad that I couldn’t lose weight, like everybody else did on the plant based diet. I was always hungry too. On the starch diet, I am never hungry between meals, and I am losing weight easily. How great is that? Remember counting calories, and the Weight Watchers Diet….did you go on that ever? I was so hungry, I could have eaten all my points in one setting. Not with the Starch diet.

The peppers are red when they’re ripe. Commercial producers pick them green, so they hold up for shipping and have longer shelf life.

I usually do potatoes in the instant pot and then some broccoli Cheeze soup or chili. Sometimes I make a pot of pinto or canary beans. Tons of salad stuff and fruit.

I’ve been lurking on your channel for quite some time. Thank you for the amazing content you put out. It’s been very helpful to my journey to being plant based. The mac n cheese tip was amazing. Definitely going to do that. I loved this meal prep video and especially liked Tim’s additions at the end. The squash air fry looks amazing. Gotta try that. I steam potatoes 2-3 times a week and buy a huge bag of green veggies like kale or spinach and make at least one big salad for dinner. Breakfast is steel cut oats and bananas, cinnamon and 1 TBS hemp seeds. Potatoes and raw veggies. I make hummus, cashew sour cream, and cheese sauce for the veggies. For lunches. I go bananas too! I make banana muffins twice a week. Thank you for the recipes!! I’m gonna try doing sone of your ideas.

Karen, I hate making these videos because of the change in natural lighting due to the day progressing the dishes piling up in the sink and the kitchen getting progressively trashed as I go through all the meals I cook. I also am horrified at how long they always are and I always think nobody will watch them for that long, but they are always the most popular of my videos. Even though I don't like them, I know people really love them and they get idea from them so I do them for you guys. I like my videos more polished. I am glad you enjoyed it. It makes it all worth it for me.

for my stir fry, i dont use corn, but i do add lots of onion, and cabbage, red pepper flakes, and sometimes spinach at the end. This is my favorite meal

Hey Joey! Since you have a Vitamix, check out a video of "Vitamix wet chop". Those carrots and celery would have been seconds to chop. Anything you want in small pieces you can do in seconds it the Vitamix using the wet chop techinique, including large quantities. Coleslaw, bell peppers for sauces, etc. It will change your life.

Tip for those without a Vitamix or a good food processor: Sieve the mac & cheese mixture to not have tiny pieces of unground cashews after blending. It helps. For more of a bite, add some lemon pepper or apple cider vinegar. ☺️

Tim with the gloves! I love it! I wish I could get it together enough to batch cook like this, it's amazing! My goal this year, I will be 62 in a few days, is to eat WFPB. I want to lose 20 pounds and I want to be healthy. I have books, I watch you of course, so I have lots of information, I just need to get a system. Mary, Tim ate the all American diet to while I was doing the conversion from vegetarian to vegan. But he started trying some of my food and he eventually started eating what I was eating. You know how husbands are, they cant be talked into anything, it HAS to be their idea and on their own time. Just get a plan together and follow it, he will come around. I promise. Good video! Thanks! When I make beans in my ipot, I use less water so throwing out that goodness isn't necessary. It's so worth cooking a few things to dip into all week. This week, I'm making your corn casserole, pintos, Mujadara (one-pot lentils and rice), and everything soup (uses up any veg, beans, or grains left from last week.) I'm just getting over the virus, so decided to buy my bread this week. Whole Foods delivery is great for fresh produce and bread. Anyway, thanks again for another interesting video. Hi Suzy, glad to hear you are getting better. The corn casserole is so good, I love that dish. I actually kept the water and used it for storing the beans, I just didn't keep it in the refried beans. LOL - you need to get yourself a set of those oblong measuring spoons that fit into those little spice jars. They're wonderful - you'll love them! You can keep the other set for when you need to scoop out of a bag, etc.

Make a large batch of oil-free hummus from your dried beans, and freeze it in smaller portions. You can make it in the Instantpot or stovetop. Make sure to remove as many "floating skins" that you can once it has been cooked. You can freeze it unflavored, or flavored. One suggestion is to freeze in empty tofu boxes or Souper Cubes, something so you have nice, square cubes that store nicely in your freezer and don't take up a lot of space. You can always remove once frozen and vacuum seal or store in ziplock bags. It works great blended with salsa or balsamic vinegars for creamy dressings, or add spices to it for a dip for veggies or on top of soups and potatoes.

I like your recipe for the cheese powder. I currently purchase from Well Your World (who is in Phoenix) but the canister is so expensive ($15) and goes pretty fast. They use potato starch instead of cashews in the powder, but then add cashews during the process of making it in the Vitamix.

@@PlantBasedDads I lived in SF Bay Area for over 30 years and went to Scoma’s restaurant in SF, but I’m not related. I’m from the Scoma’s who went south to Ft Worth, TX. My grand parents immigrated as children in the early 1900. They set up a shoe cobbler business in downtown Ft Worth. My father was born in 1935. You might have cousins in Texas!

I noticed we are both the same in that we don't like to waste food ; ) Did you know you can leave 2-3 inches on your green onions and put them in a small glass of water. They will keep growing and it's fun to watch on the kitchen window!

Yes, I often do that. I haven't in a while though but I need to start again. They are just so cheap at sprouts for .50c for a bunch of organic.

Who says stuffing is just for Thanksgiving? It's delicious! In fact I think next week I'm making Mac & cheese and a big dish of stuffing (dressing). Probably should add some steamed broccoli. Yum. Thanks for this video. Got some good tips.

Hi Joey and Tim. Thanks for another great video. I love watching your channel. There is always lots of inspiration. One question though. I really really dislike the taste of Nooch. If I add it to food, it’s the only flavour I can taste. Do you have any suggestions for an alternative other than mushroom powder?

Love the real-life feel this meal lends to the meal-prep experience. When you prep the zucchini in advance like you’re doing here, do you reheat it in the air fryer also? We took it camping & I ended up chopping it & putting it in with curried lentils for our supper as the spears lost water & were kind of droopy a few days after cooking.

I have not reheated it in the air fryer, just the microwave. Its never as good as when it first come out of the air fryer but I just eat it anyway.

They are Le Creuset and they are Doufeu style Dutch ovens. He uses them in the oven but I use them on the cooktop for many things. We have had them for about 15 years which is way before we started making bread. Thanks so much for watching and for the kind words Julie.

what air fryer do you use? I like the idea of using a tray for the food. It looks like a breville. Which size do you have? One costs about 300.00 dollars! Yikes! Do you have a smaller version? Still watching and enjoying your videos. You and Tim are so down to earth but entertaining

Hello Carol. Our Vitamix came with that salad dressing blender thing. The bottom is the same size as the decantur that came with our Vitamix, but not sure if all the Vitamix model decanters are the same size or not. Sorry. The dividers in my binder are to separate all my recipes. That binder is where I keep every recipe that I have and its my future cookbook if I could ever find the time to put it together in print form. Thanks so much for watching.

Just started watching and happy you are oil free although I did hear you use cashews which contain lots of oil. Dr Esselstyne recommends that no oil means to reduce nut and avocado use not just cutting out bottled oil use. I'm sorry if I'm misunderstanding you.

Hi Sandy. This is a family meal prep episode. In the video I talk about the cashew cheese and mac being for my 15yr old son, as well as the fact that we are making him ready to go vegan pizzas. My son is a swimmer, in great shape and not concerned about being oil free. My spouse and I are the ones doing the McDougall program. I have a family so that was why I mentioned in the beginning and during that Mac and cheese meal that I am prepping food not only for myself but for the rest of my family also. My son doesn't care about anything Dr Esselstyne says and I am not going to force him into that lifestyle just because I am doing it. As long as my son is Vegan, I am happy. He just got a new wallet and wanted it to be made of cork because he Didn't want leather. He is on the right track.

Interested in Tim’s sourdough recipe and bread roasting pans. Joey great meal prep recipes . What recipes do you use for your son’s pizza, do you precook the pizza crust and just add toppings and toast as he needs them ?

Hi Marilyn. So the bread pans are just dutch ovens from Le Cruset. We have had them for at lest 15 years each. He uses them for bread and I use them as sauce pans and for everything else I cook. For the pizzas, we actually make 4 small mini pizzas with the sauce and vegan cheese on them (all for Lexx) and then put them in a container in the fridge. Then, when Lexx is hungry after school, I set the toaster oven to 350, toss in a mini pizza and heat for 10 mins. Thats it. He eats all 4 of them every week after school, along with Mac and cashew cheese and his other favorite which is bean and cashew cheese burritos. Thanks so much for watching.

I would love to know how you come up with what you're going to make each week. Just kind of what your thought process is. When you air fry the potatoes & sweet potatoes, do you use the air fry setting on the Breville or bake? What temp do you set it on? Thanks a lot for making this video Joey! Laura, a lot of it comes from seeing what others are eating and then thinking "I have not had oats in a few weeks, I want some of those. Then I am on an oat kick for 3 weeks and after that, I am on to something else. Some of the things we make every week like refried beans and potatoes. But some weeks we add the Ethiopian lentil stew or fried rice. This week we have a lot of Swiss chard in bloom so I am going to harvest that stuff and make the White Bean and Swiss Chard soup. I would love to prep all my food on a Sunday but how do you prevent the things to go bad in the fridge over the days? I always cook a big pot of starch (rice, pasta, potatoes) and put it in the fridge and that lasts for 3-4 days but when I prepare vegetables or even finished meals and put them in the fridge they are bad after 1-2 days... Am I doing something wrong?

Have you checked the fridge temp? It should be at about 35-37 degrees at all times. Put a thermometer in there overnight and see what it says in the morning. My food lasts all week in the fridge.

Hello. Those are my recipes I make. All my KZbin recipes are in that book along with everything else I cook that I don't have videos for yet. One day that will be a cookbook if I could ever find the time to transfer all those recipes to a book. In the mean time, I cook out of the binder. Everything from my buckwheat recipe to my cheese sauce recipes.
