Hello everyone. Well here it is, another weekly meal prep video. You know I dont like making these because they are imperfect since I cant really plan each part of the process like I normally do, but people love watching them. So, this was our meal prep for the week and we ate ALL of it!! Let me know in the comments below what you are making for meal prep to stay successful this week. -Joey

Yesterday was my day 1 MM, and I prepped potatoes along with you. I made the hashbrowns and had those for breakfast, 2 small purple sweet potatoes for lunch (nothing on it), and mashed potatoes with roasted carrots for dinner. Today's dinner will be those mashed potato ball things and air fryer Brussels. I just found you yesterday by googling "Mary's Mini potatoes" and I do believe you've changed my world already! Thanks for the great perfectly imperfect video.

When I get a fresh bag of potatoes I boil up about a half dozen to ‘barely’ fork tender, let them cool down and keep them in a ziplock bag for use throughout the week! We make steak fries all the time.

This is my favorite video of yours that I've watched so far! If it were perfect and you had a camera crew it would not be half as enjoyable. I live in a small city in southern Italy, and can you believe there is no frozen fruit of any kind available here? Even the tiny non-organic containers of three kinds of fresh berries they occasionally sell cost a fortune. And dried sour cherries? Ha! But there's a lot of other tasty fresh fruit, and I have fig trees. Yum.
