Cue the Bull Run fan boy (me lol) When it comes to Single Malts from Portland, i highly recommend Bull Run over Westward! They actually started out as the same company, House Spirits, then Bull Run split off to focus on single malt. Then House sold Aviation to Ryan Renyolds and started up Westword. They're both great, but Bull Run is *amazing*!

Meadowfoam Honey is a honey varietal that's unique to the PNW. Meadowfoam is a flower that grows in the Columbia River Gorge and beekeepers will use it as pollinators for their bees. It has a really great taste to it, and worth trying raw. Personally to me I feel like it has a slight spice to it

5:00 Originally, the comparison between finished product and individual components came from talking about how Oxidation plays into aging. Time brings two things, first it mellows flavors and brings balance, young whiskey often has those individual notes because certain notes are so dominant and apart from the others but with time they balance with each other and become cohesive so your brain can form a picture. The second thing was from the new flavors that Oxidation brings, it creates 10s of thousands of new flavor components and many of those are neede to fill in the gaps that help our brains identify things but that are not easily named themselves. We know could identify the difference between raw dough, sliced bread, and toast but if we had to name the actual individual changes that were taking place we couldn't. Oxidation causes those little micro changes over time and nothing else can make them so you can't hurry up the process or skip it. - Jason "The Pinnacle" Sowder

Agreed and definitely appreciate your input. Forgive me for riffing here, but this sounds a bit like where psychology, otolaryngology, chemistry, and patience collide? I love this stuff. Or maybe its a little twist on semiotics--basic signifier/signified/sign theory but applied to what we identify as we nose and taste whisky. I usually consider patience a virtue for which I have very little time, but whisky makes me respect it, specifically the time (and air) a pour might need before and while sipping it as well as time and air in a bottle and the changes they bring. For example, the whisky in both bottles of Kilchoman Machir Bay cask strength I've had tends to develop a characterisitc and alluring butteriness after more time and air get involved, usually after several months.

I thought there was a requirement for Bottled in Bond, that the distilled spirit was by one distiller. But I don't see that any more in the legal description. Did they change it?

You should read their marketing for Milestone 2024, the really go all out on the verbiage. That said, everything I heard from those that had it tell me how incredible it is.

Their barrel warehouse (or one of them, anyways) is just south of Portland in Clackamas. I've done a blending class there, it's pretty neat. I'm sure they have others with the volume they're doing these days but AFAIK their inner SE Portland tasting room is mostly for production, and not so much aging. Westward's club is really great, their quarterly releases are really interesting experiments. Fun to see how one or two variables can completely change the base profile with different yeasts, mashbills, finishing barrels, ages, blends, etc.

Rittenhouse actually has a non-Bottles in Bond version! I’ve only seen it a couple times but it’s 80 proof with a pale gold label instead of black. Not sure if they still make it and the people you were talking about likely didn’t know about it.

I got nothing wrong with you reviewing whisk(e)y that's sent to you from the producer as long as your reviews are honest. And being from Oregon and having been to Scotland....climate-wise for 9 months out of the year, they really are almost identical. So I really think if you specificy malt whiskey inspired by scotch, then yeah I think their statement isn't wrong.
