you should try to remove the silverskin upsidedown like from a fish. Start from the middle like you did and hold/pull from the skin against the blade. This way you can run the blade flat against the skin. What comes to grilling, nah you literally can't mess it up.

Tastes like filet minon is a bit of an oxymoron. A filet is probably the least flavorful piece of a cow. I get what you are saying though.

If I wanted it to taste like filet mignon, I'd have went to a resteraunt, and ordered a steak, instead of hunting a deer.

Looks like the surface of couple of them is burnt, most likely caused by cooking directly over the flame. The smaller piece you cut first also looked overcooked and to dry. Lastly I would let the meat rest few mins before cutting it so the juices (if there are any) stay in the meat.
