I love watching what I eat in a day videos. I always get new ideas! I’m like Devyn, SUPER busy so excited to see what she eats! I’m so glad mangos are back in season! I’ve been craving fruit so much this pregnancy. They’ve been a big go to for me. I make my oats very similar to Niki. That tofu scramble burrito looks awesome! I haven’t tried them yet but it would be great on the go when I’m showing a bunch of houses. I know I’ve said this before, but you ladies are some of my favorite vegans on KZbin. You show how accessible veganism can be and how much variety there is, all while remaining kind towards others who aren’t fully there yet. You are exactly what the vegan online movement needed :)

OBSESSED with this quick lunch bowl I’ve been doing: the frozen Trader Joe’s organic green vegetable foursome served side-by-side with brown rice, half an avocado, sprinkled with sunflower seeds, coconut aminos, lemon juice, and a drizzle of sriracha. I will literally never get sick of it, and it only takes about 2 minutes to throw together!

I had oatmeal with banana, blueberries, cinnamon, ground flaxseed and hemp seed with a drizzle of maple syrup for breakfast. Lunch was leftover mushroom broth with a red curried brown rice and a side of greens with broccoli slaw and sunflower seeds on top with a red wine/balsamic dressing. Dinner is quinoa bowl with 3 kinds of beans, onions, with Mexican seasonings and strawberry salsa. Snacks were a handful of nuts, a little twice baked potato in air fryer with ketchup, some kimchi, and pineapple!

As always, great video! I can't wait for that pizza recipe, Nikki! My fav meal yesterday was actually pizza, too! I make a lentil/carrot, quinoa curry and puree it w/almond flour to make the "crust" then warm BBQ sauce, hummus, pineapple and veggies and serve the warm "sauce" over the crust with crunchy lettuce. SUCH a treat! Yum!

This one was extra unique! Might have to slide this to my vegetarian friend who really wants to go vegan, but “can’t” because she’s always on the go and there aren’t enough on the go vegan stuff. But my favorite thing was my dinner which was a clean out the veggies meal with rice, mushroom, green pepper, artichoke, green beans, and some nice sauces

Wow that oatmeal looks so yummy! Makes me want to eat a bowl. Thanks for the inspiration and great ideas. I will do most of my cooking on Sunday and have leftovers for the rest of the week. Made blueberry scones (sadly won't last the week) and got a vegetarian French cookbook that I am veganizing the recipes to so far haven't been disappointed.

I am in the process of making myself an acai bowl and were expected to get dumped by MORE snow here in Colorado, typically I eat acai bowl when its warmer but I have ripe MANGOES that I really want to use.

You guys should do a vegan ice cream bar taste test. Went to the store last week and discovered so many new ones and didn’t know what to buy. They had the So Delicious (which I’ve had and like), Daiya now has ice cream bars and so does Haagen-Dasz and Magnum.

Have you ever been close friends with a vegan/vegetarian who gave it up and started eating meat? Recently my best friend & her husband who were life long vegetarians leaning vegan decided to give up vegetarianism and have started to eat meat... and all kinds of meat not just fish or whatever people typically do. I wasn’t really sure how to react, it was a blow to my system. They aren’t doing it for their health, they’re doing it because they’re trying to achieve a certain physique that is easier to obtain by having carb free proteins apparently 🤷🏽♀️

Janet Polanco i wish i was! i used to live closer to miami, i’m in kissimmee/orlando by disney now which you would think would have a lot of options bc tourists but it’s all super touristy restaurants like every single basic restaurant (carrabbas, longhorn, applebee’s,bahama breeze, etc) though they have vegan options they’re basic and wish there was actual vegan restaurants near me. orlando has sooo many but i’m about 40 minutes from the city i’m just by disney lol every restaurant just has like one thing i can get usually just a veggie burger. there’s a place that has the impossible burger which i’m excited about :) just wish there was some healthy vegan restaurants around besides sweet tomatoes lol

Anyone else think none of these girls ate enough calories? It seemed their meals were only 300 maybe 400 calories which for 3 meals would be max 1200 calories...

That’s what it seemed like to me to as well. I know people say “everyone is different and should eat according to their hunger and intuition” which is true, but you still need to make sure you are getting adequate calories, protein, etc.
