Breakfast
I don't measure the ingredients always as I eyeball it. Here's the rough measurements. I change up the flour from oat, buckwheat, spelt and almond.
Pancakes:
1 banana
1/3 cup soy or almond milk
1 tsp vanilla
1/4 cup oat flour
1/4-1/3 cup buckwheat flour
1 tsp baking powder
- Mix ingredients together and cook pancakes on medium heat in a nonstick pan for 1-2 mins each side.
Choc Sauce:
1 tbsp cacao/cocoa/carob powder
1-2 tsp rice malt syrup
1-2 tsp almond milk
Lunch
1 banana
1/2 cup frozen bluebs
1 cup frozen mango
1 pure frozen acai sachet
1 scoop vegan hemp protein
100ml coconut water
- Topped it with purely Elizabeth granola, coconut flakes and goji berries - I get these on iHerb linked above for a discount.. seriously the best granola!!!
Dinner
2 sweet potatoes diced
1 tbsp olive oil
All purpose seasoning
- Bake for 30 minutes or until golden at 200°c
Other ingredients:
Blackbeans
Lettuce
Quinoa
Avocado mashed with coconut yogurt and lime juice
Sweet chilli sauce
Drink and Dessert
Hu chocolate I get on iHerb, so yum!
Matcha I just do 2 tsp matcha powder and whisk with water then add soy milk.
