this year I've been getting really into my fitness journey and a huge goal of mine is to build muscle. naturally, eating a surplus of protein is super important and I've had to figure out some quick and easy, go-to vegan meals that can help me reach that goal.
my meals look a bit different everyday, but recently, these are the meals I've been having the most frequently. I also love switching things up by swapping in a different fruit or veggie or a different sauce to help keep things interesting. these may look super healthy, and they are, but I go HEAVY with the seasonings, which is my trick for making my food still taste amazing.
