Derek! Not sure if anyone else mentioned this, but if you haven’t already, try replacing the silicone ring of your InstantPot lid before you replace it! I've been watching Derek for several years now, and the most incredible thing that he does is somehow put about 3 pounds worth of food into his blender with about 1/2 cup of water and it somehow blends perfectly. If I tried to do that I'm pretty sure my blender would catch on fire instantly. Truly amazing.

Another fine video. Smoothie suggestion: try adding some amla powder (powdered Indian gooseberries) - *extremely* high in antioxidants. My regular breakfast is a chia-seed pudding, and I include a teaspoon of amla powder in that, along with 1/2 tsp of ground cloves, another antioxidant powerhouse - and 2 Tbsp dried barberries, an excellent source of antioxidants. I do grind the chia seed (about 2 1/2 Tbsp) and also grind a tablespoon of flaxseed for the pudding. I include 1/4 cup old-fashioned rolled oats (not cooked) and a teaspoon of cinnamon and a teaspoon of dried marjoram, both excellent for antioxidants. I add a cup of frozen mixed berries, about 1/3 cup chopped walnuts, and then enough oat milk to mix it well. I leave it overnight in the fridge. - And I'm so happy to see you using an intact whole grain (brown rice rather than white rice). The bran is not just fiber, it's high in minerals and vitamins. Hope to see other intact whole grain being used (rye, farro, Kamut®, emmer, red fife wheat, winter wheat, et al.).

Another great video. When you get around to replacing your Instant Pot, I hope you get one that has a yogurt button/dial with ferment setting. That way you can make absolutely fabulous cashew yogurt. It's super simple to do and frankly, my homemade cashew yogurt that I make in mine is the only plant based yogurt I think is edible 🙂. To make 2 cups of cashew yogurt, you just blend 1 cup cashews with 1 cup water and a pinch of salt until smooth and creamy. Then, you add 1 Tablespoon yogurt (I buy a big tub of plant based yogurt and then scoop out the yogurt in 1 Tablespoon measures and freeze them in an ice cube tray....thaw in the fridge before using.) and stir it in well. Pour into a pint sized Mason jar. Place the jar into the pot (do NOT add water to the pot.). Hit the Yogurt setting, then Ferment on High setting for 14 hours. Place a glass lid on the top and let it do its thing. When the 14 hours is up, place the jar in the fridge to chill and voila! (You can use yogurt starter in place of the yogurt that you add to the cashew cream, but it's expensive and harder to find.)

@@lvdmerwesince making yogurt doesn’t require pressure cooking, you can just use a skillet or glass lid BUT it must fit the Instant Pot so that the temperature inside during the fermentation stays the same. If you don’t have a lid that fits the pot, you can use the Instant Pot lid. Just put it on the pot per usual. I hope that my explanation makes sense.

It's my new years resolution every year to learn to eat something I don't really like. There are SO many things that I couldn't stand eating before, but that I now learned to LOVE. Cilantro, celery, smoked paprika powder, tofu. I've never been a picky eater, but now, as soon as there is something my taste buds don't like I take it on as a challenge 😂 Still working on liquorice though, it's a tough one. Trying and re-trying things in the kitchen has really developed my cooking skills, I always recommend it!

I'm having the same problem with my Instant Pot. The steam setting leaks all the water out. It was the one I use to use the most. I can still steam my veggies by using a different setting like the soup/broth & adjusting the time as needed. Initially I used it only for cooking beans but now use it also to steam veggies, make broth from scraps & occasionally a one pot meal.

Agreed - probably good to replace the plastic seal ring about once a year, depending on use. I replace mine when I notice it's not coming up to pressure as efficiently as it should. No need to buy a new appliance, which is great 😊

Love the smoothie but I noticed it struggled to blend for a second which I used to deal with all the time too. I started loading up the blender based on what vitamix recommends and it has been blending so much easier! Start with your liquid, then powders, then greens, then fruit and frozen items at the end. Loading it with heaviest items on top will push everything down and allow it to blend really easily. Hope this helps!

I think the only thing you should need to make it seal up again is to replace the sealing ring? Save some money. I've got 3 seals, because the smells of different foods sticks to it, and I don't want everything to always have a hint of chili stew. 😊

Have you tried to replace your sealing ring on your IP? The issue with sealing might be that the ring needs to be cleaned better/replaced. That is a lot cheaper than a new Instant Pot!

Looks so yummy! My hubby loves chickpeas so I'll try making the Canadian fusion Thai curry for him. I'll use my sunflower seed cream instead of the creamed coconut to avoid the high saturated fat and sugars, to reduce his risk for another heart attack. Great work as always, Derek and Crystal! By definition what makes sushi sushi is not fish, not Seaweed but the rice. Specifically short grain rice cooked with Japanese cooking wine (and water obviously) or you could add sugar to rice vinegar instead

I remember in high school they made us all taste this weird paper strip thing that had some chemical on it that defined what type of taste buds we had. Then split us in to groups and asked us if we liked certain foods and it was really accurate. I remember cilantro being one of them and I didn't even know what it tasted like back then so had no answer, but I'm sure other people in my group said they liked it. Thanks for the kind comment!

Today I learned you can freeze ginger and it can still be a-ok when you need it. (Thanks!) Would love some more tips like that- ways to save the veggies/fruits that might go bad if you don't use them. I know you're fantastic with just using what you have to whip something healthy up, but if you ever just dont' get to something- what should we do! Or maybe more recipes of throwing things together. Essentially, just keep making videos forever and I'll always watch them.

Before you get a new IP, try buying a new silicone ring seal for it. If that doesn’t fix the issue then you have an extra seal for the new IP. (As long as it’s for the same size pot). Question: What type of Miso did you use for the dressing, 18:16 red or white ... or does it matter? That seaweed salad bowl looked delicious!

I don't think the type of miso matters much. This was Genmai miso so I think it is called golden miso. It uses brown rice, but I'm sure any miso will do. And it isn't the ring that is releasing the air, we have replaced it once. It's the actual vents that just don't seem to seal properly anymore. I took them apart, cleaned them and all that and it still doesn't seal. The top of the body is also rusting quite badly. It doesn't get in the food or affect it much, but looks really bad in videos and such. So with a few things being wrong with it, I'll keep looking for one if they go on sale.

The food and fun all looks amazing, as usual. I think you and Crystal are in a dead-heat tie with my other favorite vegan couple, George and Natalie Fit Vegan Chef. I'm curious if you had any sticking with that tofu since you didn't cook it in a nonstick pan. I'm scared to death to cook mine in stainless steel because I'm afraid I'll leave half of it stuck in there.

Great video. I didn’t realize you could freeze ginger. If it’s organic do you still have to peel it before gratin. I’ve heard people freeze whole lemons and grate them frozen skin and all. Is that possible?

Frozen ginger is great. I almost feel like it improves the flavour somehow. It is so easy to grate too. I just left the peel on and didn't notice. I did cut the weird woody parts off though.
