Currently I'm giving them copy work or practice work of previous lessons , but giving them work that's 1 or 2 grade level below their level is so clever. i will try this.

Thank you! We have several grade level and below grade level workbooks in language arts and a few in math. I've only been assigning pages from them on days I am away to work so as not to overload him.
