How to do the "degorgement" of the sparkling Soalheiro is the topic of this video.
After receiving the grapes of Alvarinho in the cellar with the desired degree of ripeness, they are pressed and placed in stainless steel vats where they will undergo the first fermentation (alcoholic fermentation).
The second fermentation takes place inside the bottle, after adding yeast and placing a temporary metallic capsule.
After this stage of fermentation and aging, the "degorgement" takes place, a procedure that allows the elimination of the remaining yeasts in the bottle and the replacement of the temporary metallic capsule by the definitive cork typical of the sparkling wine. It is also at this stage that the degree of sweetness of the sparkling wine is determined.
With the exception of Soalheiro Sparkling Brut Nature (the first sparkling wine from Alvarinho without sulphites), this procedure is common to all Soalheiro sparkling wines - Soalheiro Sparkling Brut (more aromatic, 100% Alvarinho), Soalheiro Espumante Brut Rosé (more elegant and mineral, with Alvarinho and Touriga Nacional) and Soalheiro Brut Barrel (where the oak barrel gives it a more evolving and intense aroma character). Soalheiro Sparkling Brut Nature does not undergo this process as it is elaborated according to the ancestral method, where the Yeast Pearls create the very fine and delicate gas inside the bottle and the cork, specially selected for the effect, accompanies the sparkling wine since its creation and fermentation in bottle until the final opening for your glasses.
