The main difference for me is the degree of mixing between milk foam and espresso. The cappuccino as distinctive layers slowing the customer to separate texture and flavours. The latte is more mix with the espresso making the tasting of the pure coffee espresso more difficult but bringing a more uniform texture to the overall beverage. What's your opinion?

Get a glass cup, froth the milk for a latte, cappuccino and flat white Then make your espresso onto the milk. Do it in reverse, not espresso first. The so call "dry" cappuccino is the real cappuccino; it uses half the amount of milk compared to a latte. The milk must be frothed to be fully frothy. Although it appears fully foam, when your espresso is dropped onto it, it forms three distinctive layers, liquid milk, espresso and foam. The "wet" cappuccino hipsters are doing nowadays; you can try to do the same test and have the milk ready first. Drop your espresso onto it; what do you see? You will see that the layer of foam is only 2cm, and that's precisely what it means as a latte, The espresso is floating near the top with plenty of liquid milk below. Now make the type of milk where you can do your latte art to do an HD drawing of a swan or something. Drop your espresso, and you realise the foam is less than 1cm. If you want to draw delicate designs, you need less foam to draw finer details. Latte done with many Latte arts are usually flat whites unless they use more giant 8oz or above the cup to have more space for drawing. Is there a taste difference? Certainly YES. The milk on Cappuccino has more air and is very frothy. The more frothy milk you get, the less it gets mixed with the espressos. They don't mix that well. Meaning the cappuccino tastes more intense and has a more mouthful texture. Since it's more intense, you only need ONE espresso, especially with a dark roast. Flat white and lattes are milkshakes, with the flat white tasting the thinnest and may require 2 ristrettos/espressos. 20 years in coffee here.

How can I mix roasted robusta and arabica ? What I heard the best mix is 70% arabica and 30% robusta . But how can I mix them ?

You roast them together. Choose two beans as compatible as possible in roast profile. As complementary as possible in taste flavours. You can use More than 2. It result in an espresso blend.

Great question! Milk should be frothed to 60 degrees Celsius for optimum sweetness. Beyond which the proteins will start to break down and the milk starts to taste burnt
