WHAT'S FOR DINNER? | EASY DINNER IDEAS | SIMPLE MEALS

We had so much fun trying a lot of new recipes this week. Every single one we tried is a keeper and I hope you will give these easy dinner recipes a try! Thanks to Hilary for sending in your Subbie Supper recipe - we can't WAIT to have it around the holidays with our family!
DIRTY RICE RECIPE:
1 small red onion, sliced
1 red or green bell pepper, chopped
2-3 garlic cloves, sliced
1 tomato, chopped
green onion, chopped
parsley, chopped
1 cup long grain white rice
2 cups chicken stock
1/2 cup white wine
1 lb Italian sausages (casings removed)
1 heaping tsp paprika
salt and pepper to taste
1-2 tbsp EVOO
Heat a large skillet to med-hi and add EVOO. Add sliced onions, saute for 4 minutes. Add bell pepper and saute for another 2 minutes. Lastly add in garlic and saute for another minute. Push all veggies to the sides of the skillet, making a well in the middle for the sausage. Tear the sausage into bite-sized pieces and add to skillet. Cook until no longer pink. Add salt, pepper and paprika. Add rice and saute for about 30 seconds. Pour in wine and cook until it's reduced down and alcohol has cooked out (a couple of minutes). Add chicken stock, stir, and bring to a boil. Reduce heat and cover for about 15 minutes...stirring occasionally. Once rice is done, add tomatoes, green onion and parsley. Stir to combine and serve!

SUBBIE SUPPER SMOTHERED GREEN BEAN CASSEROLE:
4 cans green beans,drained
10 slices bacon,cooked and chopped
2 tbsp soy sauce
1/3 cup light brown sugar
1/4 cup melted butter
1 tsp garlic powder
1/4 tsp pepper
1/4 tsp salt
Empty the 4 cans of green beans into your crockpot. In a glass measuring cup, mix the melted butter, soy sauce, brown sugar, garlic powder, salt and pepper. Whisk together until well combined. Pour over green beans, then and the bacon and stir well to mix every thing together. Heat on low for 2-4 hours. If you would like to make this in the oven, bake at 350 for 30 minutes.

First let me tell you that the cheese grater countertop gadget you use is a Godsend! I bought it for my mama who is a master of homemade buttermilk biscuits! She told me she briefly freezes her butter like you do before adding it to the dry ingredients. And then she GRATES THE BUTTER IN THE COUNTER CHEESE GRATER!😳 mind blown! Finally, someone who actually makes sausage gravy the right way 🙌🏼🙌🏼🙌🏼 I know of too many people who use the packets of gravy and that’s a no no in my book! When I make sausage gravy I use salt, pepper and a dash of sage (my granny did this often). Now I gotta make some good ol comfort food this weekend! Congrats on 25K, Mandy!

I just found your channel about two weeks ago and have tried several of your dinner ideas. I often feel like I'm in a rut with a daily dilemma of what to cook, so thank you for giving me ideas. One cooking hack I'd like to share, which I learned in Honduras, is to rinse the dry, uncooked, rice until the water runs clear before cooking it. I usually let it soak for about 10 minutes the first time, which cuts down on the rinsing. Still, you can expect to rinse it 3-5 times. Also, oil your cooking utensil before adding the rice and stir to coat every grain before adding the liquid. Then, do not stir it anymore. This will result in rice that literally falls apart when done. And it can set without getting sticky.

Right on time!! I have been working on a grocery list and was trying to come up with something different to cook. Yummy!! A slight variation on smothered green beans - cook a chopped onion with the bacon and get it all caramelized, then use the oniony bacon fat instead of the butter. 😋
