WHAT'S FOR DINNER? | EASY WEEKNIGHT MEALS

HOT BROWN CASSEROLE:
1 loaf of cubed French bread
3 to 4 cups of cubed turkey or 2 cups of turkey and 2 cups of ham.
3 Tbsp of butter
3 Tbsp flour
1 tsp salt
1/2 tsp black pepper
3 cups milk
8 oz of shredded parmesan cheese
1/2 lb of cooked and crumbled bacon
1 cup of diced fresh tomato. I usually use 2 plum tomatoes as they are pretty good year round
Spray a 9x13 casserole dish and add a loaf of cubed French bread. Top with your cubed turkey or the turkey and ham mixture. In a saucepan make your cheese sauce. Melt the butter and stir in the flour. Cook 1 to 2 minutes. Pour in milk. Season with the salt and pepper. Cook until it thickens. Remove from heat and add cheese and stir until melted. Pour over the casserole. Bake at 375 for 30 to 35 minutes or until hot and bubbly. I like to broil the last minute or 2 to brown the cheese slightly. While the casserole is baking cook and crumble the bacon and dice your tomatoes. When you remove it from the oven top with the crumbled bacon and tomato. I usually just serve with a salad . This feeds 8 to 10 people. Leftovers reheat well in the microwave for lunch the next day.
Note: if you do not have leftover turkey and ham to use up then go to your deli. Ask for 2 slices of turkey sliced 3/4 of an inch thick or 1 slice of turkey and 1 slice of ham both sliced the same way. Bring it home and just cube it up. At Thanksgiving and Christmas I often have leftovers and I cube it up and freeze it in quart freezer bags in 2 cup portions. I then can grab 2 pkgs of turkey or a ham and turkey. Both variations are delicious. We prefer it made with both the turkey and ham but if I only have turkey none of the family has ever complained.
