2 pancake tips: 1)either use a nonstick pan or a very VERY thin very EVEN layer of grease/oil/butter to make a more evenly colored top (I don't know where y'all are from, but where I come from, pancakes are a perfect even brown across on both sides, not mottled light and dark!) 2) cook on a lower temperature and learn to speak the language of the bubbles to know when to flip (this gives the pancakes time to rise and cook in the middle so you get a fluffier thicker pancake without resorting to any gimmicks like whipped egg whites) AND DON'T YOU DARE EVER EVEN THINK OF PRESSING DOWN ON A PANCAKE! FLIP IT AND LEAVE IT TO RISE AGAIN! THIN PANCAKES ARE NOT WORTH EATING! I learned these tricks from my mom who can barely cook, but made the BEST pancakes for us out of bisquick and patience!
