I like how when Steven describes how the first pancake delivers all of what a full breakfast should be that Andrew is clearly listening and open to it. If you look at earlier videos, Andrew was still cynical about Steven’s wild imagination. Now Andrew is not only converted, but is now saying things like. Plate to portion, “ PP”. I love it!!

I will say this before seeing the food, I appreciate Angler's lead just demonstrating his knowledge of the food they work with and the goals they have when it comes to making cuisine. He keeps on message with everything he's saying its not a offhand "we also do it because of x reason" its no, this is our identity. This is how we took ourselves to an objective stance on our cooking and came out the other side vastly improved. You have to be willing to be critical of yourself in the resteraunt business to take the risks they have with some of their menu in order to provide the best product to the customer possible and they are doing exactly that here.
