To be fair, Uncle Roger's recipe is your typical everyday fried rice (I think it's from Malaysia? Fried rice recipes are different between Asian countries so I'm not sure) so I'm not surprised that he didn't win against a freaking chef lol That being said, the rice shouldn't be "mushy" as the girl said, if that was the case then it's the maker's fault, not the recipe's.

That is why you need the wok hey, which Uncle Roger always say, you need the wok and the wok hey! You need to cook it and toss it in the wok hey till it crisps up. That is not Uncle Rogers fault. His recipie is still on point. This guy didn't apply enough wok hey haiyaaaaaa!!!

As an Indonesian, Uncle Roger’s fried rice is actually closer to the version I usually make rather than the Rich Brian ones. The difference is I use sweet soy sauce (kecap manis), the sauce they used on Rich Brian fried rice.

I think you missed the point with fried rice. It is an Asian food that our mother made for us whenever there is leftover rice. So, I think Uncle Roger's fried rice is the most suitable one. Other recipes were great but a little bit too complicated and not exactly the type of ingredients that go well with leftover rice.

I didn't use royco . . . instead I use a sauce called saus raja rasa, that also for kecap substitute . . . my mom almost never use royco in her cooking, but she use saus tiram or raja rasa for umami flavour . . .

It’s an interesting video but might be a bit hard to compare since the first two fried rice recipes are very specific. People who are not used to eating kimchi might get put off by the kimchi rice since kimchi has very strong flavors. Curry can also be an acquired taste and can be quite strong to those not used to it. The last two recipes are very familiar in the west and they have no ingredients that are unfamiliar and region-specific. Just my two cents.

Regarding the recipe of Uncle Roger egg fried rice. The very important thing is missing here is the "Wok Hei" that Uncle Roger always emphasis it. Chinese makes fried rice with "Wok Hei", extremely important. It's not about the ingredient, but the technique to make simple things become amazing.
