She is in a country the doesn’t have the stinking democrat regulation. The average dairy farmer in the U.S. has been put out of business because of regulations about everything about where cows live and what they eat, where they eat it. Right now an Amish dairyman is in court for dong what these people do in Switzerland. People wanted raw milk, he sold it to them. Here in Montana the dairymen are gone because of the government regulations. Thank your FDA.

Great review of European cheese compared with Americanized cheese. One thing you didn't cover is that the European cows have A2 casein where as the American cow have A1. Definitely affects the digestion system differently. I for one prefer goat or sheep cheeses that are produced in Europe. Their treatment of animals are more humane and they have better quality control of their products.

It is not just what they eat. Everything is organized in a way that ensures the milk cows produced doesn't have any stress hormones from the cows. At certain times of day, they take the heard up higher in the mountains, due to temperature changes throughout the day. The less stressed the cow feels, the healthier milk it produces. They ensure that the cows are comfortable in their environment and provide them with best care possible. It is massive, massive labor every single day. But it's understanding the animal, climate and time is a big key that makes them #1 IMO

My family lives on the Italian border with Switzerland. At university, one of my roommates was from Sardinia and her father was a shepherd. I had some of the best sheep cheeses there…and Sardinia is known for their centenarians. In Italy we call the cheese from cows in the Alps as “formaggio di alpeggio” or “di malga”, it’s like for wine and a terroir, the cheese will take the flavor according to the season and what the cows have been eating. And I love goat cheese! I am not eating at the moment but I miss cheese and don’t miss meat. Cave aged gruyere one of my favorites

I think wealth plays a much bigger role in Swiss longevity than any specific food because the culture around cheese (and hiking in the mountains) is quite similar in Austria but the life expectancy is clearly lower (81.6 vs. 84.2 in Switzerland, according to Eurostat, 2024). Diet seems to play a bigger role in the longevity of Mediterranean countries like Spain and Italy though.

Looking at 'wealth' as well as 'diet' as a factor of longevity is terribly misleading. Both essentially reduce the complexity of social (not merely monetary, not merely dietary) reasons and variables which are involved into only a very small and partial variable. Of course the "wealth" factor might contribute in terms of privileged access to medicine and hospitals (middle classes live longer than working classes e.g. in North industrialised countries such as the UK - yet with considerable regional variance), while Mediterranean diets, such as especially the Greek one, do contribute - in general - to healthy life (though itself colonised lately by the the western industry of producing and selling everywhere processed rubbish foods - while the society's structure has also been changing). But overall, the main factors in play are SOCIAL: Such as related to community life and meaningful, safe, living and social integration, work satisfaction and control, national politics, capitalist production, consumption practices, family structures, exercise patterns as part of social life, etc.

Guyere is currently my favorite and I eat a lot of cheese. Learned a couple decades ago to eat hard cheeses as opposed to soft with lactose intolerance. Is the "gemmet" the "cow snot" vegans tease us about? I've run several portions of this video back. What?! No lactose in guyere? Let me watch it all before posting. Learning so much... The cows look sooo healthy😲 I want my source of cheese eating wild lavender thyme and other wild herbs.

In regards to the stress of them though may I ask what happens to their baby calves ? are they yanked away and fodder for veal? One hopes they are treated as kindly as the milk producing adult cows are. I truly would appreciate any feedback possible on that angle. Thanks again for this informative video.

Had to share that most US block cheese actually only has milk, salt snd enzymes. So I would say it's the quality of ingredients vs the list that make the difference. The ingredient list shown is unique to "shreeded cheese". They add all that crap to prevent caking and mold. Not really an apples to apples comparison, although definitely shows you should buy block and grate your own. Thank you for sharing your wisdom and cheese tour. Big fan.

Most people do not have the extra income to buy these locally sourced cheeses, or imported cheeses from these regions. Not to mention that some of those so called health benefits come from the grasses that the cows are eating. Why not just eat a whole food plant based diet? And eliminate the risk that comes from dairy? Yes there might be benefits but there is also some risks and those benefits are not exclusive to cheese only.

Thank you for your educational video. It makes sense, i see Europeans eating lots of cheese and they arent heavy and they look healthy. In Canada European Cheeses are the cost of gold. I see why, even our processed cheese is expensive. So i usually dont buy a lot of cheese. Its not unusual for people to steal cheese here.

The practices followed in the US and Europe are indeed very different, but it is hard to find any information on dairy other than cow. Please address the difference between cow, sheep and goat milk products. I ask this because my husband and I are WFPB, and I make soymilk yogurt at home, but we recently had to travel to France owing to a death in his family and a family gathering. For 2 weeks we were in Ganges, a small town (under 4000), in Herault, in the Cevennes National Forest in southern France. They raise sheep on the hills and mountains around there and the farmers market and even the local supermarket were well stocked with fresh and aged sheep milk cheese and yogurt. So, we ended up eating sheep milk yogurt and cheese every day along with an abundance of fresh produce. We usually bought from the farmers' market or the organic produce shop. We had no GI problems the whole time. While we felt guilty, it was SO DELICIOUS.

Cheese is not unknown in Chinese cultures. Related: Qiaomu Fu, of the Chinese Academy of Sciences in Beijing has confirmed the world's oldest cheese (so far) is 3,500 years old, used kefir type ferments. It was found some time ago, but the tools to analyse the DNA were not available at the time.

Yes! Asians ferment almost anything! However most Asians were dirt broke. Takes a lot of food to feed an animal. They barely had food for themselves. Majority of Asia ate plant based foods because they had no access to anything animal based. They had a food scarcity when the west lavished in all kinds of animal and processed foods. As a result, the traditional Asian diet has learned to assimilate an abundance of green veggies, roots and fruits on a daily basis.

When did you go to Switzerland?? So---about cheese...I was going to run this by you, but I started making my own "farm cheese" this summer! I just slowly heat 1 gallon of whole milk to a low boil. Then, I add 1/4 cup vinegar (other acids like buttermilk can be used, too). Turn heat off, and the casein and whey will separate, leaving the curds. I strain this into cheese cloth---squeeze moisture out, and add my flavoring. I've bee putting a little salt, homegrown green onions and peppers from my garden. There are MANY herbs and more I can put in. Anyway, I end up with a softball size cheese ball that I hang for a couple o9f hours in the cheese cloth. It it YUMMY! Ok---so should I use organic milk? At least this is not super "processed", right? :)

Good long lasting plant milk with no junk are in the dairy section in many stores away from the junk filled ones. Natural grocers is one. Cost more but go on sale and last over a year unopened.

I agree ingredients make a difference however the US ingredient list shown was for shredded. Most of those are unique to shredded to prevent caring and mold (better to just grate yourself). Most US cheese blocks have similiar ingredients..milk, salt and enzymes. I would say the difference is the quality of ingredients and not the list.

Most swiss brown cows produce A2 protein. But the cheese factory sourced from a variety of farms. I didn't see any mention of protein types.

I stopped eating dairy and my health improved. I eat fermented soy products. I make soy yogurt without sugar and use it sparingly like a dressing. I think people need to realize there are vegetable products that may host the same microbes as found in the dairy that the cows acquired from eating the plants. I think it is cruel to take the baby cows from the mothers and force the mothers to keep lactating on a machine. I could go on. Even these high quality sustainable dairy places need to be a relic of the past. They could convert this into a plant based plant and the cows could be allowed to dwindle. I get polyphenols from plants.😊TY

As a child we had a garden with chickens in the garden producing fresh eggs...our friend had a cow living in a pasture with fresh milk we made butter and ice cream with wild honey and fresh wild black berries...we made yogurt and cream cheese...I ate from Gods garden just as Genesis chapter 1 explained....God made vegetation to serve as food for man and animal...After removing fallen angels the earth will be restored into a perfect paradise of all living creatures living in peace love and harmony....Revelation 21 : 3, 4...Revelation 22...

@danielraymadden - If you read Genesis 1 : 29, you'll see that God doesn't refer to *any* animal-based material as consumable-just plants [that] yield seeds & fruit from trees. So when you eat eggs and dairy "products" (milk, butter, ice cream, yogurt, cream cheese) you violate God's directives. This means you're not in Paradise; no, you're in the opposite place. Repent of your ways-if, that is, you actually believe in what has been written in Genesis. And just remember: *you* are the one who brought up Genesis in the first place!
