I find the price of (pork) ribs in the Netherlands going skyhigh. For the thick (Iberico) ribs the pricing is around 14 to 20 EUR for an full slab. When eating with four adults it's way to expensive for what you get. Great to see this video, keep up the good work PitmasterX and crew 🔥👊🏻

Brisket was once a cheap cut. Connective tissue, with time and temperature, turns into gelatin and flavor. Barbecue makes what isn't "good" into amazing.

It is a sign of a true pitmaster to make the cheapest, less costly cuts taste amazing. Plus, if it doesn't turn out great, you can always say, "Ah, I tried the cheap cut. . ."

For me it doesn’t really matter that much. The only thing is dat after I started making my own ribs on the kamado, ordering ribs out just doesn’t do it for me anymore. Whatever ribs I buy from my meat dealer, they’ll always be better.

I have quit ordering ribs at a restaurant. Anything I cook in my kamado is better than the ribs at most chain joints.

You can't go wrong with pork ribs. Last weekend I smoked some with mango/chipotle jam marinade, they turned really good. Saludos.

Analytically, you could take out the bones & waste, weigh that. Then you can use a rough rule of thumb based on the idea that any set of ribs with the same number of bones will have the same waste weight, and determine "fair" price according to what the whole piece minus the bones weighs.

The only ribs i still crave for are the "krabbetjes" or "Sieuw paw kwat" made by Chinese restaurant Jasmine Palace in De Meern (Utrecht these days). Those ribs were perfect Kantonese baby back ribs with an awesome sauce (Hoi sin? Plum? combination of those?) It's been about 25 years since i last had them but I still remember the flavour, they really made an impact on me. If you can find out the recipe for me that would be awesome but i've mailed them myself more than once too, it's one of those "Chef's secrets" i guess.

Hey Pitmasters crew, n a low&slow setup, when do you put the wood for smoking? I have the Kamado blocks and in my last cook i put them just after lighting the charcoal but they caught fure and were gone too soon. Also, is it an issue if you put meat in the grill and some sides of the charcoal are still black and not lit up? I heard conflicting info on that. Friday will be cooking a couple racks of ribs on the Kamado Joe ;) Thanks!

Roel, I've seen a lot of videos, not just yours, with pitmasters using pellet smokers. From what I see, the pellet smokers don't make that nice blue smoke necessary for good BBQ. Are you getting the smoke flavoring using a pellet smoker? I'm skeptical. Maybe do a comparison cook of a pellet smoker vs other smokers that really do obtain that nice blue smoke. Your opinion/comment is much appreciated.

They’re great, traeger makes one I love. You have to really look at the quality of the pellets. Pellets can contain wood from hundreds of trees mixed together. Even if they are all one species of tree, it could be many mature trees and less mature trees. This makes a change somewhat in the way the wood smokes. Some also are coated with stuff to prevent wood rot and other fungal growths where as a split log will not unless it’s outside for months. However I only use it on some steaks and chicken. When I’m doing ribs, whole pigs, briskets, I always go back to my side box wood smoker, homemade outta oil barrels. Nothing like one single flavor smoke in a much better concentration. I also feel pellets bring more bitter smoke if that’s possible. More char due to more surface areas instead of planks or blocks, which I think gives a more coal taste than that sweet smoke

No If you like the full rich taste and just want a bone or 2 and share the rest and eat some other dish, take that one. If you want to stuff your face and eat a whole rib, and still have a absolutly good time take the cheap one. both come somewhat out at the same price per person so the choice is yours:D

The cheaper ribs apparently taste better since they have less meat which means more seasoning per square inch. Maybe a few knife slits across the expensive ribs might help get more seasoning in there

Maybe not marinated, but they definitely need more rub than the cheaper cut. Roel put about the same amount on both, so the meat didn't get seasoned to the same level.

@@JerryB507 -- That's what I was thinking, too. I probably would have seasoned the thicker ones a bit more and let them sit a bit longer before putting them in the smoker.

Honestly, the ribs are usually way to expensive for scrap meat, sometimes even rediculous. Saw them at 12€/kg which are very expensive bones.

Erm. A point of order mr pit master. “Shiners” normally means ribs that have been cooked too hot and too quick. Not because someone has stolen the meat. I am happy to be wrong.

Not a good comparison. They are both the same ribs. Its like comparing an 8 oz wagyu to a 14 oz wagyu. If u compare the iberico ribs to maybe choice grade ribs, then that would make more sense

Paying more per kilo? ......so are you paying more for a heavier slab of ribs?..........can’t see the point of this video , if you want to pay more for a less meat to bone ratio then fine. But I eat meat not bones so I’ll have the more expensive ribs any day

Anyone can be a “Pitmaster” with a glorified oven. Pellet Grills always have been and always will be cheating. Also, call me a hater, but both sets of ribs look dry
