Many years ago when I started our garden I had difficulty raising bell peppers. My neighbor and long time family friend gave me some advice. Sprinkle a ring of epsom salt around the pepper plant. Works like a charm!

Mrs. Lori, I just wanted to tell you that I made this last night for my husband's and my dinner and it is a keeper! I used black beans in place of the corn and omitted the green peppers because my husband doesn't like them. Also, I used a homemade taco seasoning for the spices. We love yellow squash so thank you for another delicious recipe idea!

I Too Love how you cook. Raised here in Dallas, Tx with All Fresh Food from our gardens. My Favorite kind of meal so Yes, I Will be making this in a few days when the Heat goes down. We are going to have 103-105 temps this week. I don’t cook in the oven when it’s this hot. Lots of sandwiches, soups, salads, etc. Stay Cool in Arkansas. They put just a small sprinkle of crispy fried bacon in those fajitas. WOW! Did it set off the flavor of everything else. I want to cook this and put some crispy bacon in it. This casserole is very similar to one I improvised when squash are plentiful! It’s delicious. My family makes this a bit different - pinto beans instead of hamburger and we make up some cornbread batter and put it on the top. All the rest is pretty much the same. Watching this brought back memories of my dad throwing this together on a Saturday afternoon with all of us kids pitching in. It was one of our favorites that he supervised because we all got to help get the veggies together. Thanx for the memories!

That sounds perfect. I was trying to figure out how to do this on the grill. How long did you cook it and did you do it over indirect heat.....I need specifics. Have to make this but don't have an oven.

@@MissieMommy518 Hi, Melissa! I turned on only half my grill on high heat. I cooked the beef in my large cast iron skillet over direct heat the whole time, seasoning it with taco seasoning. Once done, I removed the beef to a bowl, reserving the grease in the pan. I put all my veggies in the pan except the can of rotel,corn and garlic, adding only a little more oil to keep from burning. I added taco seasoning, garlic salt, onion powder and pepper to taste. Once the veggies were crisp- tender, I added the corn, chopped garlic, can of rotel, and ground beef back in. I turned the grill down to medium heat. Once well blended , I put shredded cheese and crunched up tortilla chips on top. I put the cover on the grill and left it alone for 15 minutes. It was done when cheese is melted and everything is hot and bubbly. Remove from heat, let it rest 5 minutes and enjoy!😄

That looks so good! My family does that same concept. My mother once a week would have a "heddi mess" meal,that meant maybe a soup,with all the vegetables and part of a roast ,and a little bit of spaghetti and maybe a small meatloaf..all heated up separately, but served as a a heddi mess meal, just heat it up and eat what you want. Yes, that's a good one for keto! In November of 2019, I started keto for the first time ever. By March of 2020, I had lost 20 lbs, which doesn't sound like much, but your body changes shape. It's unreal. During the wicked 'pandemic', I got bored and started eating any and everything and by March 2021, I had gained it all back. About a month ago, I decided to go back on keto. I went for a doctor's appt. today and had lost 10 lbs. I usually fret before I get weighed, but I didn't feel great, so I didn't even care. I was surprised because the scale at home is kind of up and down, but I knew my clothes were fitting better. It's not a diet you have to fuss over. I certainly haven't been strict on it this time, but even if you cut out the bad carbs, it tends to work well. This is a great time to enjoy all those yummy veggies in the garden. Sorry for the novel. I tend to get wound up sometimes.

@@lindahandley5267 Your story sounds so familiar. In the summer of 2019, I lost 50 pounds by changing to Keto and doing 1 hour of water aerobics in the pool 5 days a week. I felt so fantastic! Then the "flu" hit. I did pretty good the first 3 or 4 months and then started baking and eating out of boredom and loneliness. Then, I fell and broke my right arm in 4 places. I was in a cast 2 months, a brace for 1 month and had a hard time trying to cook anything so....take out food became my way of life. I'm back on Keto now, have lost 30 pounds...AGAIN...and determined to get the other 20 pounds off and STAY in shape!

@@lindahandley5267 You are so sweet. The infamous fall...It was 9pm and I had been out on the back patio working on craft projects all day in the July heat. I had just finished spray painting a large urn a beautiful turquoise blue and looked down to see the spray had blown all over me and left me with "Smurf feet". Before getting into the shower, i decided to jump in the pool for a few minutes to cool down and hoping the pool chemicals would loosen up the paint a bit. Got on my suit, walked out the door, stepped off the patio slab into a small rut in the yard, lost my balance and down I went. I ended up face down on top of my right arm on a concrete sidewalk. I managed to get the swimsuit off, put on a sun dress and drive myself to the ER. I spent the next 4 hours sitting in the ER with blue feet, holding a mangled arm and being stared at. I chose to have a turquoise cast to match my feet, which remained blue for about 2 weeks. LOL Having some help would have been a blessing, but that was at the height of the lock down and everyone was afraid to go near anyone else. I made WAY too much meatloaf the other day and I think I'll take it, brown it a little with the Mexican spices, I have one large yellow squash and chopped peppers in the freezer, canned Mexican corn and fire roasted tomatoes! I so enjoy watching you cook. This casserole looks delicious. I’m on the Weight watchers program so I’m going to lighten this up using lean ground turkey and low fat cheese.

Awesome recipe, made a huge batch with two squash and two zucchini that my cast iron skillet wasn't big enough so put it in a 9 by 13 casserole pan. I need to buy a bigger cast iron skillet!! Love the recipe, had it for supper tonight and will take to work the next two days for lunch!! Love your videos and recipes!
