#冷藏低溫發酵口感風味更升級,冷藏發酵約16~20小時(兩倍大即可),取出後不需要回溫,可直接排氣分成小麵團進行整形
麵團dough: 約580~590g 麵團,可作70~75g 小麵包8個(如果要做大一點的麵包可以把麵團均分成六等分即可)
• 高筋麵粉 bread flour 300g
• 白糖 caster sugar 4TBSP
• 鹽 salt 1 tsp
• 高糖酵母粉 instant yeast 1 ½ tsp
• 牛奶 milk 100~110g
• 鮮奶油cream 30g
• 雞蛋 egg 50g
• 黃油 butter 40g
整形配料topping :
• 美乃滋 mayonnaise
• 帕瑪乾酪碎 parmesan cheese
• 粗玉米粉 cornmeal
• 番茄醬 ketchup
• 切達乳酪碎 cheddar cheese
• 蔥花 green onion
• 蜂蜜 honey
• 熱狗sausage
