good thing that stuff is hard to get around here... I could even deal with the cottage cheese, but at that point.... But I guess without it the receipe would not work at all and the cheese would only into a sticky mess, not very creamy. I know other receipes that used for example velveta instead. less for the taste, but for the melting salts in that stuff that actually helps the other cheese to melt into creaminess.

Yeah that was kind of irritating, wheres the Mac in the Mac and Cheese when you don´t use Macaroni. But to be honest, those ellbows are sometimes hard to find here in Germany, and a traditionall macaroni looks more like a big hollow spaghetti. In the end it's both noodles, so it should not matter that much. I think the main difference is in either the consistency or how much the sauce coats the noodles. About the receipes otherwise, I have to confess I would try his version first, just because it is a lot closer to the receipe we make. Just slightly different cheeses and spices, but with the cheeses again it comes down to availability. You don´t usually find pepper jack around here that easily. Somehow the cheese sauce and the sour creme and the condensed milk throws me off a little, but to be fair, how should I know how good it is without trying. I bet when nicely cooked and melted I would not turn down any version. But the cheese sauce... yeah, again, somewhat hard to find here or as a specialty import product, quite expensive. There not really much of a local version of that unless you want to give some of the cheese dip they sell for Tortillia chips a try.

I think hers looks better but the cottage cheese and cheese sauce are a no for me too. I would still try it though 😅. To get more texture I use Mexican Crema Fresca and to get a creamy feel I use melted cream cheese. It's so interesting how everyone loves mac and cheese but we all make it so differently.

@@roudiamondgh92 Cottage cheese is great in mac and cheese! (I do a pasta with cottage cheese and bacon (it's a bit like a carbonara or alfredo but better! I omitted the Campbells cheese sauce and added Marscapone cheese. It'll be done in a couple of minutes. Wow! It is really good!

Cottage cheese has no real taste, so that's not a problem, but the cheese sauce, the only reason her momma put that in there.... It goes back to using whatever you got. "ya'll watnt mac and cheese... ok let me check the pantry". the one thing about the cheese sauce, is you don't need any salt cause that is loaded with salt.

I totally agree. That means you have some idea how to cook, and what makes what good. Too many people don't understand the true tech of Mac and cheese so they just start mixing up noodles and cheese or throwin cheese in a cheese white sauce. For instance, you have peoplee making a roux, and added eggs. this means they just doin what gma did. Both are thickeners so you don't, need both. Moreover, heavy cream /half and half are thickeners, likewise the excess starch from the al dente noodles is a thickener. you DOnT need All three. choose one or two. You wanna know why we all have diabetes that why.. I almost never put eggs, unless I'm working with a custard base. but. you don't need eggs and flour. and the longer your cook the egg based sauce the more it will curdle and separate. Its the diff between a smoothe cohesive sauce or a semi broken cheese sauce. dont get me started. but if you get me in a mac and cheese contest... I'm gonna whoop ..... starting with the neighborhood recipe and then putting a kite on it, cuz I already know what ya'lls doing... 🤣

There’s no such thing as the “best” mac n’ cheese: it all depends on what your preference is at the moment. Sometimes you want it baked, or stovetop, one cheese or multiple cheeses, with or without add ins, breadcrumbs or not, gooey or more like a casserole. Whatever floats your boat, it’s all good.

This taste test put a SMILE ON MY FACE!!!!!! I never, ever could imagine using spaghetti pasta for mac and cheese, but I guess that’s because it’s called macaroni and cheese, not spaghetti and cheese. I love his New Orleans accent, though. It reminds me of the couple next door (during my childhood), who called each other beh-be (baby)... it was adorable. Thank you for the fond memories. Now I think I may have mac and cheese for dinner tonight!

here's how i make mine✌: 1:First, I cook 1 and 1/4 of a cup of small elbow pasta in 1 cup of Half & Half until aldente. 2:Second, I mix in some Cheddar cheese and some White Cheddar cheese. 3:Third, I wait for it to melt, and after it's melted, I stir in some salt and pepper. 4:Fourth, I put it in a bowl and I eat it. (Do not throw away the Half & Half you cooked your pasta in. That was the base of your cheese sauce.)

Sour cream, cottage cheese, and that canned cheese soup is how my family makes the sauce for my family Mac and cheese recipe too. I've modified it a lot as I learned more about cooking, but those will always be part of it.

It was a true joy watching you two in your friendly competition. I must say by just seeing the final results, both looked absolutely delicious and I would have to make them both for an occasion to offer a traditional comfort food from different regions and cultures. Great job both of you!!!!

It is odd, but it is pasta. Both on their own actually should taste the same, so... I would take it any time. I bet it would work with ellbow mac as well. I think main difference would be the texture and that the wllbows may not fill completely with cheese sauce while the spaghetti are evenly coated.

@@alexku8452 Macaroni is actually "elbow pasta" so i guess if you use anything other than that its not authentic haha. But i love any type of pasta and cheese combo!

I always use a roux when I make my Mac and cheese - I pretty much use the same recipe (except the spaghetti noodles - I’ll have to try that.) and where’s the hot sauce?!?

Our receipe has kind of a twist mixing ingredients from both versions. We start with mac, not Spaghetti, but as od as it seems that should not actually matter. Then we also make a roux and ad first the cheeses and then the spices. but I think adding the spices first may be a lot easier. Then for cheese we usually go with sharp Cheddar, Velveta (or an equivalent available here in Gemany), Mozzarella and some Parmesan cheese. Pepper Jack is almost impossible to find here. and the Velveta has in common with her cheese sauce, that it contains melting salts that help the cheeses to melt into creaminess. But I think any kind of swiss cheese wich is a little more spicy may do as well instead of the Velveta for taste, it just might separate a little more when cooking.

Seeing Kenneth’s Mac and cheese made me miss my granny’s so much 🤤😭 I’m from Texas but she was from Louisiana, so all I knew was spaghetti and cheese til I hit about 8 (cause we don’t eat at everybody house lol). First time I had it with elbow noodles I was so confused 🤦🏽♀️😂

Team Kenneth, but hers is similar to how my family made it on my mother’s side minus the cottage cheese and evaporated milk. My Dad’s side did it Kenneth’s style but we also added breadcrumbs on the top

My mother is from Louisiana and she used spaghetti noodles. I'm from California and traditionally I used elbow. I now use ANY pasta noodle I want, and basically it's the say. I even loved it with egg noodles.
