Chef hats off to you for all the 3:45 research and dedication. One suggestion, heat and honey should be avoided for its nutritional value, further if we are adding gluten then why not use maida it's one and the same

Hi chef i didn't use chakki wala atta but used store bought one I think because of that i think 350 ml was more for that atta . My dough was so sticky and moist that i couldn't lift and put it in the tin . Another thing which happened was the second time proving was morre than required it overflowed the tin

calcium propionate powder is preservative, which is used for industrial production . bread improver is different and used for improving texture it has acidic property emulsifiers , soya flour , yeast etc. It is optional. you can also add 1/2 TSP of vinegar insted of bread improver. but bread improver is effective in making bread softer.

ye dough me pani thoda jyada hain. jyada aap is dough ko kneed nahi kar sakte. ye regular dough se jyada sticky hota hain isliye.🙏
