Easy Eggless 100% Whole Wheat Bread Recipe
This beginner-friendly recipe for homemade 100% whole wheat bread is not only healthier than store-bought white bread but also incredibly versatile for all your bread needs. The best part is that this recipe uses simple ingredients you probably already have in your kitchen!

Ingredients :
Whole Wheat Flour/ Atta - 3.5 Cups/ 420g
Water - 1 Cup/ 250g + 1/4th Cup (as needed)
Milk - 3/4th Cup/ 180g
Milk Powder - 2 Tbsps/ 16.5g
Salt - 1.5 Tsp/ 7.5g
Sugar - 1 Tbsp/ 15g
Instant Yeast - 1.5 Tsp/ 5.6g
Butter - 2 Tbsps/ 30g
Milk Wash
Oats - To Top
Chilli Cheese Corn Toast :
Shredded Cheese - 1/2 Cup
Boiled Corn - 2 Tbsps
Salt & Pepper - to Taste
Green Chilly - 1 no
Milk - 1-2 Tbsps
Onion Seeds/ Kalonji, Chilli Flakes & Coriander Leaves - Garnish
Process :
* Start by mixing atta/ whole wheat flour, 1 cup water & half of the milk in a bowl, combine only until it comes together & make sure all of the flour is well hydrated
* Cover the dough with a damp muslin cloth & allow it to rest for at least 30 mins - this process of hydrating the flour is known as ‘Autolyse’
* In a separate bowl, combine instant dry yeast, milk powder, sugar along with the leftover lukewarm milk & give it a stir - we will cover the bowl for 5-7 mins & allow the yeast to activate until it becomes light & frothy
* Once the dough has hydrated for 30 mins, add in the activated yeast mixture to it & combine well
* Add in the softened butter along with some salt & rub it in the dough
* Transfer the shaggy dough to a flat surface & knead it well for atleast 10-12 mins until it becomes smooth & pliable
* After kneading for 10-12 minutes, take a small portion of the dough & stretch it carefully using your fingers - if the dough holds it shape without tearing, your bread dough is well kneaded & ready to rest. If the dough tears, knead it for a few minutes and try this test again - this is known as the ‘Window Pane’ test
* Round up the dough & cover it with a damp muslin cloth - allow it to proof on the countertop for 10 mins
* After the dough has proved, sprinkle some dry flour on top of it & knock back the dough
* Carefully, roll the dough out in a rectangular shape - the breadth of the rectangle should be of the same size as the length of your bread tin
* Roll the dough into a log as shown in the video, pinching it tightly after each roll
* Once a log is formed, pinch both the sides of the log as well & transfer it to a greased bread loaf tin - the dimensions of my loaf tin are 3.5 x 8 inches
* Press the dough evenly using your fingers - apply some oil on the cling wrap & cover the tin - allow it to proof in a warm spot for another 40-45 mins/ until it doubles in size
* Once the dough has proved, we’ll brush the top surface with some milk & sprinkle some oats - press them down gently & bake it at 180C for 30-35 mins
* Once baked, de-mould it & place it on a wire rack - allow it to cool down completely before slicing it
* This 100% Atta bread is quite versatile - enjoy this in sandwiches, toasts or absolutely anything 🍞♥️ - Today I’ve made a simple chilly cheese corn toast
* For the filling, combine shredded cheese, chopped green chilly, boiled corn kernels, milk along with some salt & pepper to taste - mix it well
* Heat up some butter in a pan & toast the bread on one side
* Add a layer of the cheese filling on the top of the bread, splash some water on the pan & cover & cook the bread on the low heat, until it crispens up & the cheese melts
* Garnish the open toastie with some coriander leaves, kalonji seeds & chilly flakes
* Serve hot & Enjoy 🍞🌾
