Ingredients:
170g carrots, grated
100 ml agave or maple syrup
50g mixture of pecans and walnuts, chopped
1/2 teaspoon cinnamon
Pinch of salt
1 teaspoon orange powder
40g chia seeds
250g vanilla yogurt
250g oats
240 ml plant-based milk
180g apple puree or mashed banana
Instructions:
Preheat your oven to 180°C (350°F) and grease a baking pan or line it with parchment paper.
In a mixing bowl, combine grated carrots, agave or maple syrup, chopped pecans and walnuts, cinnamon, salt, orange powder, chia seeds, vanilla yogurt, oats, plant-based milk, and apple puree or mashed banana. Mix until well combined.
Pour the batter into the prepared baking pan, spreading it out evenly.
Bake in the preheated oven for about 35 minutes.
Once baked, remove the carrot cake from the oven and allow it to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Once cooled, you can optionally top the carrot cake with some yogurt and chopped walnuts.
