Being born and raised in Munich, I am deeply convinced that the Italian white wine vinegar and the Chinese brandy at 2:25 gives the dish its true Bavarian taste 🤠😎👍
Thank you, as a Chinese I remember being in Leavenworth (a USA "Bavarian" touristy town) in Washington State and I had this amazing schweinshaxe (probably not as good as the one in the video) during the cold winter and that's such an etching memory! So I am so glad Changsha could enjoy this recipe!

No doubt you may have enjoyed the Schweinehaxen at Andreas Keller (Downstairs in the Beir Stube) There's is probably the very best in the world. I've travelled throughout Europe and never once had anything close to being as good!

The schweinshaxe in Ludwig restaurant in Leavenworth has a harder crust. I guess the meat wasn’t marinated long enough.

after steaming is it better to dry the knuckle first in fridge overnight before grilling in the oven? I read some pork belly recipe that say dry skin is a must to get good crackling. any suggestion?
@@islovegod9508 Kümmel hat ein herbes Aroma, ist aber deutlich milder als Kreuzkümmel. Kreuzkümmel hat im Vergleich zu Kümmel einen stärkeren Eigengeschmack und ist daher nicht gut mit anderen Gewürzen kombinierbar. 简单来说 孜然是孜然芹的种子,小茴香是茴香Fennel的种子。孜然颗粒更小,颜色更深。

It should be Caraway Seeds (Persian Cumin).中文是 葛缕子。看上去跟孜然一样,跟小茴香颜色不同。上次我去德国问了一个酒店主人的,在澳洲,加拿大的德式餐馆也都是用Caraway Seeds 炖Sauerkraut.
Love your program. Too bad I am not in Chang Sha...but I'll remember this place, just in case I happen to be there some day. Paulaner Brauhaus near Hotel Kempinski Changsha..hmm....I know the one in Beijing, next to Friendship store......I was a frequent visitor before.

@@WhosHU hi, I think that to cook in a conversational oven it should be on fan, rather than grill mode. The crackling didn't work out, but the pork was lovely and soft and the marinade was amazing

Yes. First with fan and later grill function should work. Happy though even it didn't turn out perfect it was tasty! ☺️

When you prepare the marinate sauce, do you put in any water? otherwise, how come so much liquid in the bowl, are they all vinegar and brandy?

Thank Hu and Kai bring such great video and recipe for us, Changsha Kempinski is my most precious memories hotel in there, I was meted my love with Paulaner Brauhaus inside. But most of sadly thing is this restaurant is closed by now. I can't taste the Paulaner beer and met her again.

It‘s a pity the restaurant is closed. The beer was really great...and the pork knuckle as well. Luckily I will post a video this week to make pork knuckle at home. Stay tuned!

Habe damals in einem Restaurant im München die Speise gekauft, komische war, ich fand das Sauerkraut sehr lecker und mein Freund hatte mir dabei geholfen, die ganze Schweinshaxe zu essen......
