if I replace turkey with chicken, the cooking time calculation is still valid with 15 minutes per 500g of chicken meat? or do I need to use another conversion rate for chicken meat?

Hello Santiago! Actually you don't need to reheat the bird anymore. Such a big turkey is still warm even after 2h of resting. But of course it not hot anymore. Normally you serve it without reheating but with hot sauce. Together it's warm enough.
You're definitely right. Share among 8~10 persons to dig in roasted turkey for special or any occasion. It goes well with gravy though which makes turkey extra flavor & feel complimentary. Christmas just around the corner, a lot of stuffs are started to display & sale & ready for home decorations vibe. yeah...

Oh! You cut the tail. Chick tail is my favorite, cut the two yellow oil glands off. The rest is so nice! A bit fatty though but looooove it.
