Yhwach also wants to destroy everything and rebuild a world without Soul Reapers, he wants to kill everyone except quincies. Aizen didn't want to do that at all, he just wanted to become the new soul king and give the souls a purpose instead of being in a constant cycle of reincarnation where nothing makes sense in the end. And his plan probably involved him fighting the quincy king when he awakened. I'd like to see a what if where Aizen won honestly.

No, he simply was an egomaniac who couldn't stand that a being as powerful as the Soul King was being used as a mere tool without free will, he couldn't understand why the strong would be subservient to the weak because in his mind the strong should rule over everyone. He is a very simple minded villain, very ordinary psychologically speaking.
