Mmmh first of all "half Sith" would explain his vast power boost as the chosen one who brings "balance" to the force he´s supposed to be user of light and darkside of the force in the first place so his power up was almost naturally bc he started to step into his true power as the one who walks both paths at the same time. The holding back part is something I never liked if it IS actually canon. Anakin was a young keeper of peace when he first met Dooku. He was arrogant and thought that his lightsaber skills already rivaled that of Yoda. Oc Dooku would defeat him even IF he had some difficulties because of Anakin´s youth and talent. But in the Clone Wars Anakin changed. He was no longer a young foolish boy. He was a Jedi General who fought in hundreds of battles rarely loosing and he encountered many powerfull foes and oc he fought against Dooku many times again. He almost defeated him twice in a 1v1 battle. Anakin was no keeper of peace any longer but an experienced, battle tested warrior and oc his power in the force grew stronger as well bc of all of this fighting and struggling between light and darkness. This is why he ultimately defeated Dooku. Because he grew stronger over the 2 years of war while Dooku was just becoming older now PLUS oc he provoked Anakin by taunting him and hurting Obi Wan. In RTOS Dooku didn´t stand a chance any longer even IF he had used his force lighting bc Anakin knew this move now and he wouldn´t fall for it a third time.

Nah it is because he did not mix it up with force lighting, dooku handle Savage Opress and Asajj Ventress like the pro he is.
