My Indian husband had the same issue - after over a decade of living in Japan, he was quite tired of hearing "So you guys eat curry every day?" from non-Indians. Any attempt at explanation would be met with "OK, it's not called curry, but it's still curry flavour, right?" As you explain, there's no such thing as 'curry flavour' or 'curry powder' - it's a different blend depending on the dish. I learnt this even more after moving to India and started to run an Indian family kitchen here. But I don't think Japanese get it yet, so one of my recent videos actually attempts to explain why this concept is wrong using examples from Japanese flavouring and cuisine! :) Thank you for helping to further better understanding of this misnomer/misconception!

I saw your curry video a few weeks ago, and I think you did an excellent job explaining it. I think Ben's explanation is not even close to as organized as yours. But that's kind of the nature of explaining a concept that doesn't exist! Nothing you say can make sense to the person who 'believes' in the existence of the concept. Take 'God' for example :P

India is the only civilization to explore vegetarianism as complete food for humans. This exploration lead to invention of so many vegetable, lentils,fruits based curries. Also, Ayurveda has played a great role. Being the richest nation for most of the human civilization, India had the abundance of resources , great minds, largest arable land in the world, (yes, more than China and US!) and all seasons. Influx of people from Arab world, trade with Romans, Greeks, Chinese and western influence from the British has also played a role in vast food collection.

This is what the west has ever done: Over simplify anything they find difficult, be it food or religion. E.g do u know Hindu means dweller of the land of river Indus(It basically comes from the word "Sindh" which again comes from "Indus" where the ancient Greeks used to pronounce Indus as Sindus.)? We didn't even call ourselves that before the foreigners introduced it. we used to call it "Sanatan Dharma" which simply translates to eternal way of life.

Perhaps the sequence could be differently stated. Originally it was the difference in pronunciation between the cousins in Iran and the cousins in 'India', where to the west, it was Haraothi, to the east, it was Saraswati. Naturally, the same big river was the Hindu in the west, and Sindhu in the east. The Greeks had issues with aspirates; to them, a detailed analytical account of the past is 'istoria; it was not a conscious act on their part (travellers, merchants, mercenary soldiers) to garble Hindu into 'indu, whereby, using a grammatical form, Indus. The entire region around the Indus, and later, well inland, all the way up to Pataliputra (without stopping there; this is the point up to which we have definite evidence), became, to the Europeans, India; to west Asians, it remained Hind. This name irritates born-again patriots, and it is less tiresome to go along with them and refer to 'Bharat'.

Sorry to correct you, but 'Kari' in Tamil means Meat/flesh. The Sauce or "curry" in Tamil is called 'Kolambu' hence, in Tamil land, they don't call it Kari, instead it's called Kolambu, ex 'Kari Kolumbu' or Meat Stew/Sauce/mix.

Kari is basically: 1. Kari leaves that you have shown in your Video, used in many Indian dishes (mainly South Indian) as a general specie. 2. A general term used for the liquid part of the cooked vegetables or non-veg dishes, although Indians don't called it carry but gravy. 3. A kind of vegiterian dish mostly popular in North India Kari( or Kadhi) in which main ingredient is yogurt serve mainly with chawal (steam rice) also known as Kadhi-pakoda or Kadhi-Chawal ( you can google it).

In fact Kadhi patta or curry leave got its name after a Dish called Kadhi, a salty sour sauce made with cracking mustard and fenugreek seeds with small amount of turmeric and dried chilli then thin yogurt or butter milk is poured over the cracking seeds stirred well and then chickpea dal (Splits without outer skin) powder known as Besan is added slowing while stirring. Salt is added as per taste. Yes curry leaved are also cracked with seeds initially for flavor. The whole liquid is boiled till the Besan get cooked and it becomes slightly thicker. So its pale colour sauce, which is eaten with rice. Sometimes finely chopped green chilli are also added, if one want it to be little hot in flavor. Sometimes lettle bit sugar is also added. Sometimes deep fried Besan pakodas are also added as dumplings. So this Kadhi became curry in the west and subsequently all Spici Indian side dishes so to be veg or non-veg with gravy are called curries.

See in india we know pasta as white pasta and red pasta....we have no clue about what kind of pasta it is...is it spegetti or is it macaroni or some other type of pasta or what kind of sause it is....we have no idea....we oversimplified pasta to understand, cook and eat it....similarlythe west oversimplified the different kinds of vegges and dals and sabzis as curries...and they say veg curry or chicken curry....now in india we know there are different veg sabzis and chicken dishes but the west simplified and called it all curries

The word "Curry" indicates a specific format of the dish prepared. The word curry itself is not a dish. When you attach word curry to some items then it indicates broadly what is being done with that specific item . Say for example - Paneer Curry, Paneer Koorma, Paneer Kofta, so on. So the curry has some broad features like use of liquid / semi liquid masala with varied ways of cooking from place to place

The word "Curry" commonly uses to mean it's a juicy ( may be a gravy ) preparation.For expl. "Potato Curry" - means it's a juicy preparation of potato - not a dry preparation. Rice or Roti needs some juicy preparation to eat.

Curry is a plant and its leaves are used to add special aroma and taste, most commonly used in the south part of India while in the north part of India we genuinely have a curry (Kadhi) dish made of Besan (Peanuts powder) + Curd. It's easy to cook but we don't cook it every day, maybe in a month or so. It's a replacement for dal. It is preferably eaten with Rice.

In Tamizh Naadu Kai-Kari was more of a slang.. Proper Tamizh it's Kaai-Kani (Vegetables and Fruits).. Over a period it got messed up to what we say now,... That's why you say Kaai-Kari Kadai as the ones selling vegetables and fruits

Each state in India has its own staple foods based on what locally available and what suits based on climatic conditions. Oil used for making changes based on temperature locally.... cold up north will use Mustard Oil for cooking, Middle India will use Peanut oil and South will use Coconut oil.... Cause curry is kadhi(कढ़ी made from curd and gram flour) and we can't eat kadhi daily. And tari(तरी) is curry or say what you mentioned it as sauce. But we refer sauce as chutney (चटनी ) and gravy for your curry sauce. Also many languages so different version.

It's amazing how you know so much and try to gather actual information by going to restaurants and I hope you have some locals too to help with your quest. When information travels across world, they somehow get changed for simplicity purpose I think. You putting this effort to know true information is inspiring. Others have already mentioned I guess. Though to add, curry is vegetables cooked with spices sometimes with gravy or without also. We also have lentil soup (daal) and rice along with vegetable curry and roti. Some beans (chana, rajma, etc) with gravy can also be labelled as curry. This makes regular full dish in my home or most homes in Gujarat. Sometimes with salad, chutney, papad and even some side dish like Dhokla, khaman, etc and dessert.

Indians have rice and roti/paratha/porotta/chilla/dosai (kinds of breads) as part of their daily 3x meal. Rice and breads are to be consumed with veggies, and lentils that are made with blend of spices which have thick-gravy like texture. Brits and Americans often generalized the term "Curry" for Indian meal. That don't know Indian cuisines are very diverse just like the culture.

I was asked a similar Questions from my friends in UK region who came in a Mumbai Architecture visit for 14 days. They asked me, do you eat Chilies and Curry all the time. I was like speechless for a while and i just said. Asking curry to an Indian, is like asking do you eat Rice & Noodles everyday in Japan or asking do you like cheese on everything to a French or Italian. Many Indians don't know there are Endless varieties to Noodles and Cheese, and People out of India don't know the different VARIETIES of Curries or Flavor blends we actually use for specific purposes, events or weathers. Kari comes for kaikari means vegetable. Basically in deeper tamil Nadu homes Kari means a side dish . We usually takes vegetables daily. if we do potato Kari it look like dry or quarter dry level. we used Kari as side dish for rice or chapati . sometime in down south Kari also mean non veg .they called chicken Kari, mutton Kari,fish Kari but here it won't be dry it will looks like stew. But in hotel curry means a sauce it looks like semi gravy .finally the hotel food are slightly different from home food. In Tamil there is district wise cooking everything is unique and different. sambar, dosa, vada are very basic level items in Tamil Nadu we have more n more dish but u won't get that in hotels

We don't call it curry..We call it sabzi..means vegetable..It can be with or without gravy..BTW All paneer dishes are my favourite one..Like Matar paneer,Shahi paneer.. Curry is basically a base for vegetable or chicken or fish or anything such as rajma(kidney beans) or chickepea or even gram flour fritters in curry as curry pakoda. So curry is made out of onion tomatoes curd ginger garlic paste and a basic spice mix. Curry can be Coriander cumin onion based (for vegetables and chicken) Curd based (for curry pakoda) Tomato cashew butter based (for butter chicken) Mustard tomato based (for fishes) Cashew and pumpkin seed based(for chicken and vegetables) Spinach and cream based (for chicken and paneer) Its a art to cook spices and blend in everything in a dish so balance and flavour comes.

curry means in liquid form, you know we add water in our dishes, add water to chicken it becomes chicken curry, same with eggs, fish, vege. next is gravy semi liquid, thick, next is fry, no water used in the process of cooking, its dry in nature.

Excellent video that genuinely appreciates the complexity of the issue at hand and tries to explore and understand and know more about it instead of serving half-baked factoids as 'truths'. And reading the comments here, I am still baffled that even such an honest exploration couldn't stop Ben from falling into the pitfall of getting the meaning of Tamil word 'Kari' right. So, that just goes on to show how much muck and misinformation is spread all over the internet (which I assume was his primary source of research) in the name of 'Indian Curry'... Actually curry is a dish in northern part of India made by gram flour, some spices and curd. It is full of spicy with sour and tangy flavour and we love to eat curry-chawal or curry-roti. But we eat it occasionally not everyday.

Nice topic....I am in Malaysia now and here too all Malaysians called indian spicy food as Carry. I came from northern part of India (Mumbai) and rarely we use this word. ( There is one dish common in all restaurants called "anda carry" anda means 🥚. ) If you use sauce word here, ppl will think you are asking for Tomato ketchup :) JFYI: Kary/carry means food that contains spicy water/grevy. So if this spicy water contains egg , call it Egg kary. If it contains chicken, call it chicken kary

The context in which I have used curry is to imply a side dish that has liquid/sauce in it. eg Chicken curry. But there could be different Chicken curry one w a coconut base or another with cashew

Curry in Tamil means a vegetable preparation that is dry; that is without gravy. So the name of the vegetable is prefixed to indicate for example "vendakkai curry" means curry of okra or ladiesfinger (vendakkai is okra or ladiesfinger.). Sometimes curry is also called Poriyal. If the preparation is with gravy, its called "kootu". Again kootu will be preceded by the name of vegetable.Some vegetables can be made as either curry or kootu. If gravy contains buttermilk / curd and single vegetable, then its "morkootu"; many vegetables then its "aviyal". "Pachchidi" is when raw vegetable such as cucumber is grated, and mixed in curd and garnished. Sometimes a sweet Pachchidi is done where cut/sliced vegetable such as raw mango is in a gravy with jaggery. This is a broad classification/description. Each can be as simple or as elaborate as the cook desires with nuanced flavors/tastes and other ingradients.

I learned from my grandma as a kid that not all sauces are curry. Only sauces that have curry leaves as ingredients are curry. In the Malayalam language (neighbor state of Tamil Nadu) there are separate words for curry that's mixed with rice as well as for curry that is treated as a sperate dish.

The word curry according to my knowledge is derived from the word "karhai" which means cooking pot. So anything u make food on a pot means curry which doesnot referred to the dish actual given name. So curry means food make or served in a pot Indian says locally as curry and the whole dishes name is the different thing. I guess i mentioned correctly.

Something with gravy ( with veg or non veg ) is basically is referred as curry in English . But local languages has many names for gravy’s depending on the ingredients, texture , taste , thickness of the gravy etc . More Liquid type is mostly called Saaru , little think cab be gojju , gassi etc , if it is sweet , hot and tangy combination then we call menaskai. If dry in nature then palya ( poriyal / uppukari , sukka ) , if it has curd in it then maggigehuli , if totally liquid then rasam . Many other like Koddel , Huli , ... this is South Indian version basically Karnataka . Similarly it takes different names in different regions .

We prepare one masala for day to day's use and also, we prepare curry powder seperately, which makes curry tastier. And this masala requires many incredients to make. And in festivals we prepare another type of curry and we make masala of that curry instantly, there and then and it tastes different.

Your video trying to understand the Indian culture and cuisine is commendable. Yes as many others have pointed out there is no dish per se "Curry" in our cuisine. As India is so diverse, you see the food changes completely every few miles you travel. In some of the places where especially foreigners visit in tourist places, people seem to add the word curry in their menu to give a sense for the tourists that they are eating something they have heard before :). Normally dishes which have gravy based consistency is referred to as vegetable/meat + curry if it simplifies. Once again thanks for trying to understand different cultures, cuisines etc of our beautiful India!. Really enjoy the genuine feedback or understanding from a different perspective rather than having a prejudiced view or over glorifying things just to get subscribers or views.

There is wide differences in food you get in indian restaurants and indian food many you get in restaurants are all dishes you don't eat regularly, its type food you eat once in a while.

Most of the Indian dishes have specific names based on the key ingredients (vegetables, lentils, etc) and the style of cooking. NOT Curry, unless we mean a simple, non-vegetarian dish with gravy. On the other hand, nearly every region has ONE dish called “Kadi” which has a sauce made from chickpea flour. Preparation style varies in each region. That is the only dish we call Kadi, but we may distinguish between them by adding the name of the region it comes from (Punjabi Kadi/ Sindhi Kadi/ Gujarati Kadi and so on).

There are many words with the same sound as Kari. But Kari literally means black. So how it came to be associated with the food you might think. Black Pepper is call karu-milagu or kuru-milagu. The word Kari used for Vegatable (or vegetable dish) comes from "kari-kai" which means mixing black pepper with vegetables (olden days). The curry leaf is again called "karu-veppilai"and hence kari got stuck to it oo. Mutton or any other meat is also called Kari colloquially ..so when you went to the shop that sold them, they thought you are asking for food with meat :)...rememeber coal is also called kari (the r sound is difficult to distinguish for nonnative speakers):)

And one more in india there is no mixed grinded species called curry sepecies. We have two varieties of sepices are distributed 1. Garam(hot) masala (sepices) 2. Thanda(cold) masala. These are distributed on their nature hot sepices are in garam masala and cold that are hot taste means not too much hot not too much sweet. 3. Other species:- these are depend on mood, ocassions etc.these are extra if want then you can if you know not then you not.

Curry comes from the world Tarkari---which means vegetable both cooked and uncooked. eg panch (five) meshali(mix) tarkari(veggie) or Aloo(potato)-'r ('s) tarkari(vegetable) In Bengal there are three types of curry or sauce for Fish. "Machher jhol" --- Mache is fish. "Jhol" is less spicy ( cumin powder and ginger paste) whereas "Jhal" is spicy n hot. Machher Jhal. Jhal means hot, not the pepper hot but chilly hot. Then there is Machher--in Kalia we add garlic, onion and species. And then there is Machher Ombol or tak ,টক, we add tamarind and sugar. We also have dishes made of poppy and mustard. jhol can also mean the watery gravy and then there is makha the opposite of jhol. eg. Murgir (chicken) makha jhol - the gravy will be thick.

Normally we have sambar which is a lentil based soup. Kolambu is a coconut and tamarind based gravy, also there is kuruma which shouldn't be confused with khorma because kuruma is a light coconut n tomato based gravy whereas khorma is made with cashew n tomatoes.

Actually it is classic a nd one of the authentic dish .. you can eat curry with rice of a bread or a roti .. exact translation is kadii not curry..
