Fun fact: some Japanese restaurants actually offer chicken sashimi! Those chickens are specifically bred and prepared in a way that minimizes the risk of contracting salmonella from them. I was intrigued by that, but didn't try it in the end, which I kinda regret now.

Medium rare chicken breast is served in yakitori bars all over Japan. Most of them, in fact, from my experience. I was extremely surprised at how good it was.

I live in Japan and chicken sashimi and tataki (lightly blowtorched but still very raw) is definitely a think here. I only eat it in Miyazaki prefecture, a place well known here for having ridiculously high quality free range chickens.

So, is the reason that countries like Japan eat raw chicken because their animals aren't kept in the same conditions that american animals are kept in, or does the isolation of being on an island mean they haven't been exposed to bacteria like e coli? I know there's raw beef, chicken, and even horse meat in japan and it's fairly common but food poisoning isn't common at all

Nah, they just aren't as paranoid about it. Your immune system can handle a little bit of salmonella just fine.

Yep, worth mentioning that in Japan they eat raw chicken, horse, and beef as well, and rarely have any issues because of how the animals are raised.

Yes, it's the handling of the animals that makes the difference. How they live, what they eat and how they are slaughtered is important. Any meat can be safe raw if treated properly, but some meats are more susceptible to contamination. Combine that with a food industry that has a strong focus on reducing the cost of food and you get into situations where even with what are considered legal food handling practices, there are risks.

The chickens used for sashimi in Japan are raised differently, slaughtered differently, served super fresh so there's less time for the bacteria to spread through the meat, and they use a breed of chicken that is less susceptible to salmonella in the first place.

i am not OP but as a German that also enjoys Mett i might answer: Its all about proper vaccination of livestock , proper inspection by the people that slaughter, additional checks by a third party and very strict hygienic conditions in general. Mett has to be eaten the same day it was made, unbroken cooling is an absolute must. I am not saying that nobody ever got sick of it, but in general it does not affect as many as the original video might make you think.

I kept thinking about Mett as he talked about raw pork. It's bloody amazing! vsmash2: I eat Mett up to two days after I bought it, though it rarely lasts that long. It is of course being refrigerated the whole time. And as many other commentators here have pointed out, in Japan they even eat raw chicken and don't get sick from it. I suppose it all depends on what happens to the meat before you buy it.

Thank you for telling everyone not to eat their ground beef rare, in Canada we cook our burgers all the way through every time but I keep hearing stories from friends who go down to the states and upon ordering a burger they get asked how well done they want it cooked! What? Who thought that was okay?

Cuz the flavor and texture is different when raw... Try a piece of sushi next time you're at a (decent) Asian restaurant and compare the experience to eating the same fish cooked. They are quite different. For example, I HATE tuna... Whenever my dad makes a tunafish sandwich, I gag... But tuna sushi? Yummm!

+animeartist888 There was one place I went to went to that actually had REAL red snapper sushi (94% of what's sold as red snapper, isn't, and that's not just a sushi thing) THAT was delicious, but I never got to go back there and now they're closed. Usually "red snapper" is bland and chewy and I tend to skip it, but if you ever run into the real stuff, you'll know as soon as you taste it. That said, I usually go for things like eel and shrimp for my sushi, so I don't actually do raw fish that often since my favorites are things better cooked anyway.

Hmmm. When you said that trichonella create cysts in pork, it reminded me of something. My family makes their own sausage occasionally. Now we always get the meat from a butcher, but when my dad was a kid they used to do it starting with just a pig. One of the things they had to do after butchering it was go through the meat and cut out things which looked like cysts. I'm wondering if possibly those were from trichonella... No one ever got sick from the sausage, and for a few decades one of my great aunts had a restaurant that sold the sausage to their customers so they were well practiced at it back then (we only make it about once a year nowadays).

What about steak tartare, which is made with raw minced beef and raw egg yolk? Also, I think in Japan it's not uncommon to eat raw, or at least "rare" chicken. How are those things possible?

The meat has to be very fresh; iirc in Germany for example there are very, very strict guidelines on how fresh the meat and eggs have to be to be legally sold. In addition to this the way Chicken and eggs are handled are different in Europe and Japan compared to North America. There are many interesting articles on the topic :)

Thanks for your answer! Steak tartare is fairly common in Europe and I reckon it has to do with the regulations on meat and eggs. I'm curious about chicken in Japan though, because, as a European citizen, I wouldn't be comfortable eating raw/undercooked chicken. I just wonder about the science behind it all. Typically European chicken wouldn't be safe to eat raw/undercooked .

+DerMarmotte European chickens are required to be vaxinated for salmonella, thats why in Europe you usually store eggs "on the shelf" while in the US they need to be refridgerated. Raw meat i would be very cautious about is pork meat, you need to be sure that it was specially prepared for raw consumption, and preferably be the freshest you can get. Also, regulations for beef are more restrictive in EU than in the US

Preedx2 The egg thing is actually because in the US eggs have to be washed before they're sold which gets rid of their protective coating that keeps them fresh. Nothing to do with vaccinations.

Dogs tend to have stronger stomach acid (1.05 to 2.2 pH in dogs, 1.5 to 3.5 in humans). Dogs have a tougher immune system than humans, and are less susceptible to E. Coli infections. And dog saliva is somewhat anti-microbial, but isn't as good as humans with digesting starch. So we're probably better at eating potatoes and bread, even if a dog is better at eating raw meat.

Actually, there is sashimi sasami (raw chicken) available in many regions of Japan. The meat used is not regular supermarket chicken, but is prepared by a specialist toriya.

Nick Veganism is amazing ;) Vegetarianism still contributes to cruelty and death (and ill health). For example, eating eggs condones the practice of killing 50% of the chicks born solely because they are male. Male chicks dont lay eggs therefore aren't profitable. Boom, ground up alive or gassed to death. Being vegetarian is a step in the right direction but I'd suggest educating oneself in order to make the ethical (and possibly healthier) choice.

I had sashimi made from chicken tenders (called "sasami") in an izakaya in Nagoya. They were seared outside, sliced thin, and you dipped them in ponzu. They were so good!

Ages ago, Mom let my younger brother cook bacon for the first time(I want to say he was about 10) she didn't really watch him since he was already good at using the stove. He didn't cook the bacon enough. Best bacon ever!

Scishow, I have watched your stuff for only a few months now, but I have learned so much back in school I never really payed attention in class, it never interested me (I still scored average across the board on my tests) but after leaving school I found I did indeed like to learn new stuff and you have given me the chance to learn even more its partly thanks to you that I recently resat my GCSE's and got B's instead of the C's previously (could of gotten A's but lets not go overboard). So Thank you and keep up the Good work, I will continue to watch your videos and enjoy every single one you make. On a less nice note, I got Campylobacter once, got a message from the county council's Quarantine office, that shit is dangerous...and nasty(not sure where i picked it up from, maybe from manchester? maybe from some dodgy meat i had on my pizza)

Actually no vegetables can get contaminated too and there are molds and fungi that can kill you dead even faster. Get an education.

i'll stop eating meat when a vegetarian-only diet doesn't cost double or triple the amount of money and effort than a normal omnivorous diet, and when distributors start clearly labeling GMO produce.

In what universe do corn, beans, rice, bananas and potatoes cost double or triple the amount of any animal product? A gallon of milk is what, 3 bucks and a carton of Almond milk is 2.50. Just admit your own apathy, it has nothing to do with cost.

If you are in a small fishing vessel it's harder to start a fire, it Italy there's also raw fish dishes if you eat the fish right away it's pretty safe. Chicken and pork ten to get slaughtered on land where it's easy to start a fire. Sushi is anything packed in rice, this was a method of preserving fish or any food really - especially for transport. The rice is mixed with vinegar and packed tightly around the meat so it severs as a barrier to the air and the vinegar is natural anti-microbial. There's a similar dish called Kimbap which is nearly identical except the rice doesn't have vinegar and the fillings are absolutely never raw, because it wasn't meant as a means preservation just for convenient eating. Asias version of a sandwich perhaps

I just read an amazing article in C&EN digital edition called "Dust, unsettled" by Janet Pelley, 2/13/2017. How house dust gathers toxic chemicals and is a huge source of exposure, especially to toddlers! It might help us all find ways to live cleaner and healthier, it would be a great episode.

In Italy we eat "prosciutto crudo", "pancetta", "carne salada" and other similar things (see salumi) which are basically salted raw meat. I eat them frequently and never got any ilness.

In Japan they have chicken sashimi but it is only 2 strips from the back of the chicken that is used. They look like small fillets.

Bit into a piece of Church's Chicken back in 1984 and it was crispy on the outside,but still frozen in the middle, I spit it out and haven't and won't ever visit a Church"s Chicken again.

Pork loin is actually best eaten slightly pink on the inside. A bit like a medium steak. This is because the muscle tissue in the loin is very dense and any infectious parasites make their way to softer and less dense tissues.

SciShow, so about 5 years ago I remember something about a farmer growing chickens that were said to be safe eaten at mid rare (but who would want to, a texture issue for me). I think it was a place in france or maybe spain. Did you happen to come accross this in your research?

Fun fact, people in rural wisconsin eat raw ground beef. It's usually served on crackers or rye bread topped with salt, pepper, and onions, and has been associated with e-coli outbreaks.

In France, almost every restaurant proposes Tartare which is ground raw beef. No problem whatsoever because French sanitary laws are better than in the US. The meat is mixed with mince shallot and parsley, capers, small pickled gherkins and raw eggs. You can choose to have it mixed for you or served unmiwed to mix it yourself in your plate. You can add worcestershire sauce and/or tabasco, olive oil... This is particulary delicious in the summer on a Parisian terrasse...

You can actually get torisashi (chicken sashimi) in Japan. The chickens are bred in very special conditions to minimise the risk of salmonella.

Well, here in Germany there are no problems with trichinella spiralis. From every pig there is taken a sample and get into labratory and not one was found in the last couple of years.

Here in north France we do find raw pork based food, and I know for sure they exist also in Belgium, Germany and Poland.

Chicken "sashimi" was fairly common in japan. i saw it at a handful of places. beef "sashimi" as well.

It should be noted that some other avian species are pretty much fine rare. Squab, duck, and goose are fine to eat rare...with goose being so rarely contaminated that it's pretty much safe to eat fully raw.
