I have lived in NM for many years now. When I first moved here, i didn't have a clue what's all this talk about green Chile?? Now 20 yrs later, I'm addicted!! .. I just made Green Chile chicken stew & it's Delicious....... 😂😂

I'm a native new Mexican who lives in Albuquerque and when I was young I would go with my parents down to hatch valley and buy a good bit of this chili. It's really good

I lived for a couple years in Northern NM in my 20’s. I’m living in Minnesota now and order a box of Hatch chiles every year, roast them on my grill and enjoy the through the cold, cold winters here. Highly recommended. I really miss the mom & pop restaurant green chile smothered burritos, haven’t managed to replicate those, sadly.

As a person who live on other side of the world. This dish is quite similar to Thai cuisine where we roast shallot garlic and this chili together take outer layer and chili seed out and pound it to make rough chili paste. This kind of dish always eat with crispy pork skin and it taste so good ....and why I wrote this at 2AM where I can't find any food ahhhhhh

Hatch is king. Meaty and smokey. I likes em hot but heatwise nowhere near as hot as thai, i think on account of the smokey meaty goodness. But any chile fits that vital spot in every cuisine-ahhhh...baby

Just came from a video about Colorado saying they are better at chile then NM,..... I almost choked on my carne adavada from Golden Pride! I was born and raised in NM and now am planning a move to Arizona. I am soo flippin worried AZ will be shit when it comes to getting (real) hot Hatch blends of chile. I hear they have Hatch taken down there but I worry it will be medium heat at best,.....mild child's play at worst. I tried the Colorado stuff and that is just what it is,....stuff, meaty crisp stuff trying to pretend to be chile, I was so sad that I bought it with real money and not monopoly money because that was the only 'real' payment that shit deserved. I know I am being dramatic over a pepper and I will be only in the next state over but if you don't live in New Mexico you don't understand! My older teen years were spent partying with my family and friends roasting chile and drinking and rubbing our eyes and crying about it! LOLOLOL! Ah, those parties were good times! I'm gonna miss my home *sigh.

I'm from Colorado, but my great grandparents were from NM. I grew up on hatch green Chile!!!! Every late summer all of the Chile stands open up! But beware of that inferior Pueblo Chile!!!

I'm from ABQ myself, live in Denver. The big jims, sandias or the dynamites they grow down in Pueblo are a good substitute but you just can't beat that Hatch flavor.

Hatch chile is the best. Numero uno! I love to roast it, peel it and make it with fresh onion, garlic and tomatoes. Put on a tortilla and oh wow. It goes with everything!! I love it!

I was small enough to not like Chile when I moved here, and then I finally grew into it, and hatch green Chile is all I’ve ever known. I grew up with the frozen green Chile in my fridge and always love having green Chile burgers, and tamales 😋🤤

Hatch Green Chile is so delicious and so popular in my family. Whenever anybody mentions it, collectively our mouths salivate like a pack of wild dingoes hovering over a steak. P.s. Green Chile stew is my favorite. You can even wrap it in a burrito if it's thick enough. Try that, you will slap yo Mama!

As someone who moved from New Mexico it's so hard when you can't get any fresh in the fall without having to pay an arm and leg and then having to roast on your own. Now luckily its being sold here more and more in cans and what not so that makes it easier

So, a lot of places sell it, but don't 'sell' it, so it's rang up as Anaheim peppers at the till. And if you're not prepared, if you accidentally get hatch instead of Anaheim.. oof... It'll BURN!

My friend in FL sent me what was supposed to be datil pepper seeds. They turned out to be hatch chilis. NEVER heard of them. I find them kind of bitter. I stuffed 15 of them with a sausage mixture.
