A must try if you get back to Las Cruces New Mexico is the green chili plate at Nellie's Cafe. Whenever I've ordered green chili and pork somewhere else, it wasn't as good.

When you get both red and green, we call it Christmas. Next time you want both, just say you want it Christmas and you’ll sound like a local. Also, you say Mesilla, like: Meh-see-ah, Aguirre like: Ah-gr-air-ree, and pecans like: pee-cons!

okokok. Good work, Having fun! On board. The double L is pronounced with a "Y" sound; "Messeeya" not "Messilla". Chile is pronounced "chee lay". "Chili" is the dish. You can tell them to take it easy on the seeds. The seed veins and seeds increase the heat. You can ask for no seeds and just chile meat for (I think) more flavor and less heat. Also, New Mexico is older than old Mexico because it was named after the Valley of Mexico 250 years before the nation of Mexico was founded.

I go home each year during the harvest and get 300 lbs of XXX Hot Hatch green, roast and peel them then dehydrate them before they turn red (Red is good but sweeter and more a dessert chile) They rehydrate back to near fresh in taste. You can dry the peel and powder is to use as a spice in cooking, and save the dried stems to use when you smoke meat and enjoy the goodness that is NM Chiles.

Where do they sell roasted green chile that has been peeled and packed in ziploc bags in HAtch or LAs Cruces area? Lujan Farms was my go to place for over 10 years but they are not in business anymore. thanks!

That sounds like an amazing tradition and a true labor of love! Harvesting, roasting, and preserving Hatch green chiles is a wonderful way to connect with your home region and ensure you have a supply of this flavorful ingredient throughout the year. Your process of roasting, peeling, and dehydrating the chiles to preserve their flavor and heat is a clever way to make them last. The versatility you've highlighted, from using the dried peel as a spice to saving the dried stems for smoking meat, shows your deep appreciation for the unique qualities of New Mexico chiles. It's evident that your connection to your home and its culinary traditions is strong, and your dedication to preserving and utilizing Hatch green chiles showcases a true passion for good food. Sharing these insights with others can inspire a deeper understanding of the flavors and techniques that make New Mexico chiles special.

5:27- Burger combo costs $12.49 @ Sparky's TOURIST TRAP ? OUCH. How about a complete enchilada, chile relleno, taco, beans and rice plate for LESS money at Pepper Pot around the corner instead? Then walk into the Hatch Merchantile building next door and the owner will offer you a FREE scoop of ice cream!

Don’t waste your time on Sparky’s. Tourist trap with a few quaint novelties on the menu. You want good New Mexican cuisine, try B&E Burrito! Much better food and the salsa is well worth taking home!!

7:23 - Sparkys is a BIG TIME tourist trap. VERY stale bun, burgers should never be cooked med-rare and ketchup should never be on a burger unless you are under 6 yrs old. and that burger is overpriced as well. Should have gone to Blake's Lotaburger instead in Las Cruces. Pepper Pot was a great choice! Combo dinner is good and reasonably priced.

Will add Blake's for future visit. Is Blake's a chain restaurant? We've seen it in multiple spots - the ad board is very memorable.

@@theRTWguys It's SMALL NM "chain" that's been around since the 50s and is very solid. Doesn't get the hype like the two places in San Antonio NM (Buckhorn and OWL Cafe) but it also wont set you back $10 for the GC cheeseburger either. I would compare Lotaburger favorably to the Whataburgers in TX. Chain joint but burgers as good as most Mom and Pops.

@@theRTWguys Next time in the area hit up Nellies Cafe in Las Cruces (Tue-Thur 7am-3pm only) Chopes in La Mesa and L & J Cafe in El Paso. All "old school" NM cafes open 60+ years.
