To make this a more meaningful comparison you need to choose a specific iteration of superman, not just anything any superman has ever done. I would personally pick superman from the DCAU to compare to Omni-Man, that would be a much more interesting match up as his feats aren't nearly as incredible for the runtime of those shows.

Omni-man is not retconned with really stupid powers over and over, his growth was shown in the comics properly. He shows realistic growth according to the world built in the comics. Superman just gets whatever power he needs from the writer to try and make it interesting. None of the live action versions actually scale to his comic powers and are technically from separate continuities and so do not have the broken abilities of comic supes.
