The glycemic load describes how much a food item increases the blood sugar level of healthy individuals. It is helpful, but it has its limitations. There are so many other factors that affect blood sugar, such as insulin resistance, insulin production, gut health, meal composition & meal timing!
Meal composition is super important! Low glycemic plant foods and berries actively help improve the glycemic load of the food they are added to. But, contrary to expectations, animal protein and animal fats make blood sugar and insulin responses worse, not better!
