Rice is the most commonly consumed staple food in the world. But it can lead to dangerous blood sugar spikes and weight gain. What are the differences between white rice and brown rice? And what are the 5 best alternatives?
1) Due to its high starch content and lack of fiber, white rice has a glycemic index score of 73.
2) Brown rice, sometimes called Whole Grain Rice, has a GI score of 68. However, it contains many more antioxidants, vitamins and fiber content than white rice, making it a better choice for diabetics.
3) Whole grain brown basmati rice has the lowest GI of any form of rice. It contains a good amount of beneficial resistant starch, which can aid gut health.
4) Resistant starch is actually found in all forms of rice, and its amount grows if you let your rice cool before you eat it.
5) Rice, especially white rice, may contain some of the highest concentrations of toxic arsenic among plant foods. To avoid eating too much arsenic, properly wash your rice in clean water before you cook, and cut back on your rice consumption in general.
6) Quinoa is a good rice alternative because it's low in carbs but high in protein and fiber.
7) Freekeh is a whole grain with a GI of 43. It's rich in protein and fiber. It also contains a good amount of iron.
8) Farro originated in Mesopotamia. It's a good source of fiber, protein, magnesium, and B vitamins.
9) Shirataki rice is made from shirataki noodles. They come from Konnyaku, a root vegetable native to Asia. They have an extremely high water content.
10) Cauliflower can be riced to create an excellent healthy rice alternative. It will supply vitamin C, fiber, and beta carotene. It's also a good source of blood pressure-lowering potassium.

My oldest son is in his early 20's and he has type 1 diabetes. They took his blood and it was 600. What I do not understand is how he could have gotten it, since no one in the family has it. But he is winning the battle now. This is good stuff.

*My daughter drinks lots of water and urinates with the same rate, there are no other symptoms to show if those have anything to do with diabetes. This is a good information that I have gone through **Diabets.Care** She is 2 years 9 months, hale and healthy, have not done any blood test. But I am not certain if one can get diabetes at such a tender age. Please I will like to know more on that*

Talk to your doctor. I have a cousin who was diagnosed with type 1 diabetes as a child. He is a healthy 70 year old. His early diagnosis, adherence to his medication and diet has kept him healthy.

for me, more than 3 months without eating rice, I started having a blood test and the result was Hbac1, 7 my blood sugar. I ate more rice than the dish, my doctor told me that I would only eat 1 cup of rice. What I did was I researched on google and youtube but I discovered something, people can live even without rice, so I tried, at first it was difficult but I told myself I can do it because it's for me. So it's been more than 3 months I don't eat rice but what I eat, vegetables, meats, eggs, wheat bread, rarely sweets but no soft drinks even juice I don't drink, water and green tea I always drink. Also exercise every day.i check my sugar now is 5.8

Your doctor may be right. I believe it's better to take good food in moderation or in limits rather than skipping it all together.

If you eliminate the wheat bread and eat no sweets at all, you'll get your a1c well below 5.6...guaranteed!! 5.8 is still pre-diabetic. Most primary care doctors will high five their patients when they get their a1c below 7 for some reason. Is it good to improve your a1c and lower it once you are diagnosed as being pre-diabetic or type 2? Absolutely, but MOST doctors don't know how to control diabetes the right way and will keep you on meds when you can easily control it by diet alone. Your a1c needs to be 5.6 or lower to say you have officially reversed your diabetes. Don't believe the "wheat" products are good for diabetics myth or you need to eat plenty of fruits. The sugar in fruit is still fructose. If you have to have fruits, stick with anything in the berry family, but only in moderation.

I have been on KETO for about 1.5 years and I love it and have improved my health lowered my cholesterol, no longer pre diabetes, and lost a bunch of weight. I LOVE all the low carb vegetables and fruit, nuts and seeds etc. I eat cauliflower every week and sometimes I eat an entire head of it in one meal with a chicken breast or whatever meat. I did cauliflower rice for the first time yesterday and the results were outstanding. Quite a surprise. I riced an entire head with a stainless norpro grater using the large holes. It was a bit of work and next time I will try a food processor which I read offers great results with less effort. The texture very much mimicked rice and it was like eating rice. I did it a little al dente and I think that helps. I can eat raw vegetables or steamed without any butter or seasoning just plain steamed veggie and like the vegetable plain flavors. Cauliflower will take on any seasoning you use which makes it great for many various cuisines. I used to eat Jasmine for Asian dishes, Basmati as an all around regular rice and for Middle eastern/Indian dishes and always with Lamb and I used to use long grain white rice for mexican. Last night I seasoned the cauliflower rice with Turmeric, Fresh cracked black pepper, granulated garlic powder and salt along with EVOO and butter. It came out GREAT! It really resembled basmati although missing the nutty flavor of basmati but the I used for basmati middle eastern dishes really made the cauliflower taste just like the middle eastern basmati rice I used to make. Cauliflower rice has excellent potential in a variety of cuisine, Middle eastern, Indian, Italian, Mexican and Asian. I will next make Mexican Spanish rice with the cauliflower using cayenne, granulated garlic powder, onion powder, cracked black pepper, fresh cilantro, butter, evoo. I will also try making a cauliflower Italian Risotto, with heavy cream, and imported italian pecorino romano, fresh basil, imported dried Italian oregano on the sprig, thyme, ground rosemary, salt, cracked black pepper, imported Calabrian dried red hot peppers, and Evoo and butter. Asian Cauliflower rice is easy too. I will just and Asian herbs and seasoning accents such as fresh ginger, Sesame oil for added fat and delicious flavoring, sesame seeds, fresh garlic and granulated, coconut milk, lemon/lemon zest, Thai curry paste, soy sauce, rice wine vinegar etc. Give Cauliflower rice a try, you might be surprised like I was....GOOD LUCK!

@@Georgia-Vic I went on got my blood tested again 2 weeks ago and the doctor messaged me and said I am in safe range for blood sugar it has dropped more 5.1 and my cholesterol has also dropped even more and still safe as it was slightly elevated before I started Keto. There’s no deny it works. The results by so many diabetics and pre diabetics speak for themselves. Anyone that says eating beef, chicken, seafood, pork, lamb, all meats and all seafoods, all poultry are either just ignorant or has the wacko vegan kook agenda.

I've noticed these past 6 months that I can think clearer;no brain fog, I'm losing my spare tire, more energy & endurance, my motivation is back after years,my hope & optimism has returned and my chronic apathy, complacence and depression are rapidly dissolving! Finally last but certainly not least my self respect and confidence that I thought I'd lost has resurfaced all by cutting out empty carbohydrates and refined sugar...Wow!

While I gave you a tick for your comment I don't agree with your diet as even though you might find rice three times a day ok, you're still only fifty. Wait till you're older, you might really regret it. It is still just a sugar so I hope there's more to your diet than that.

@Neith That was childish. Rice turns into nothing but glucose once you put it in your mouth. I can eat nothing but meat and survive on it because it has everything in it that the human body requires. After all, it's the same thing. But unless you want to be turned into glucose (which the body needs little of) keep going.

You can live with rice as the Chinese used to do but they also ate a lot of green vegetables and fish and meat. Now they're eating the American diet and are suffering the same sicknesses as the rest of us.

I regularly eat a small portion of whole brown rice (called Jyoti Rice in India) for my midday meal. For breakfast, I eat flat bread made from Millet. In winter, flat bread made from Sorghum (instead of Millet) is preferred. Great for diabetics!

Good information. Unfortunately Cauliflower is a trigger for Gout it contains the highest level of purines that increases uric acid levels. I have gout and learned this the hard way.

Former T2 diabetic here. Nice video! Good substitute recommendations. But one thing that was not mentioned was that when rice is washed and cooked they lose pretty much all B vitamins. Loss of B vitamins is what leads to Beriberi. Unwashed parboiled rice is a cheaper, more nutritious alternative that actually still tastes like white rice. Shirataki rice tastes gross and super expensive. The others may look like rice but don't taste anything like rice. How did I reverse my T2 diabetes? I am Asian so white rice is a staple in my culture. I simply gave it up in exhange for my health. I replaced rice with fatty cuts of meat, grass fed butter, pasture raised eggs, seafood, and more saturated fat. Increased my daily salt intake. Lost 60 lbs in 6mths and reversed all of my health markers, including cholesterol. Cholesterol does not cause heart disease by itself. Refined grains, sugar, veg oils, and inflammation do. Carbs are optional but is not an essential macronutrient. What we seek in carbs are actually micronutrients, which animal foods are already loaded with.

I have gone down that exact path for the last 15 months with similar results. Being German I am more into spuds, not rice, but have learned to live with very little of that - a small baked potato about once a month with loads of sour cream/butter/bacon bits and salt. I'm convinced that the guilt helps slow down the glycemic index.....really!

I am of south Asian heritage so rice is a huge part of our diet. I am Diabetic so I had to stop eating rice and spikes my sugar very quickly. I Have discovered cauliflower it certainly is an amazing food. I eat more vegetables now and cut down on my carbs.

If you substitute rice with shirataki or cauliflower rice then you will have less energy if its a staple in your diet because they are lower in calories. Its better to substitute rice with a whole grain like wild rice/quinoa or you can buy lundberg brown rice which is organic, lower in arsenic and lower on the glycemic index

Haven't eaten rice in years...don't miss it, and I am not even diabetic. I just prefer proteins and greens. A little homemade bread now and then and fruit. Done and happy!👍

@@audreynicoletti7329 The concept behind eliminating the starches is to control blood sugar levels and spikes. The wrong type of carbs makes your blood sugar spike. When that happens your pancreas releases insulin that prevents you from burning off the glucose and actually pushes the sugar to the liver and your gut (stored as fat), causing weight gain. I am over simplifying. Control the carbs (eliminate sugar as much as possible), control calorie intake, and do intermittent fasting and there is no way you won't lose weight. The longer you go without eating (example 20 hours) the more fat you burn. One pound of fat is equal to 3500 calories, so reducing by 500 calories a day is one pound of fat a week. There are too many variables that I don't know for me to help you dial in a program. Trust me, once you give up sugar you will not be hungry. Dr. Berg has many useful videos also. Don't give up and stick with it. Good luck.

The era where there was no White Rice no Brown Rice... because to make this we need Machine and electricity. In that era of no machine no electricity.. people our ancestors eat only Human Hand Pounded Natural Rice. It has Lowest GI only 42, Its easy to digest, fast cook, no presoak need. While making it no heat is generated. So all its nutrition saved, all oil of rice grain saved. its taste is saved. So people just follow your ancestors for food, because you got your DNA from them. Perfect timing for me to see/hear this video. I have avoided brown rice and quinoa, etc…..not knowing if safe on it. I can bring those back in now. Been doing low/no carb since first of April 24. Have listened to many many videos…..on this subject. Attempting to educate myself wisely…..so as to….get better physically. Thank you so much for…..your generous perspective about healthy foods. I may be in….keto flu…..or detox…..so my symptoms are unidentifiable. Has your husband had blood work done? I eat a very low carb diet and my sodium levels had gotten low. I had to increase my salt intake and lower my liquid intake to less than 50 oz per day by my doctors suggestion to raise my sodium levels back to normal.

Recommendations: Eat rice twice a week (half cup). We Filipinos eat rice thrice a day. Probably 3-4 cups per meal.

Black rice has a GI score of 42. However, I still found that if I eat it more than twice a week, my sugars spike. Whereas white rice can spike my sugars more than 70 points.

I make brown rice a day ahead then sauté celery,onions,mushrooms. Mix with rice, fry it up and add a TAD of soy sauce. Divine!

Thank you guys for your work on this channel. I am certain you are changing lives. I am not diabetic but I try to stay clear of high sugar/carb lifestyle. BTW zucchini/courgette is also an easy and fabulous alternative to rice. I am defo going to try the shiritaki noodles.

Good afternoon. I'm from the Philippines. Of all the rice substitutes in the list, cauliflower is the only one available in wet markets and supermarkets. A kilogram of cauliflower costs about 7 dollars and is also more or less 85% of our daily minimum wage. Are there any other rice substitutes in your study that you can suggest that is locally grown in the Phillipines? Thanks.

Wow good price. In Alaska fresh cauliflower is $11 per half kilogram which is 5-10% of my daily wage.

I've been eating rice all my life (I'll be 53 of Feb. 2022)until recently though because of some things I've discovered such as:the high carb content of white rice, all grains add weight and are not healthy for human consumption (it's what's used to add mass to livestock to sell and make profit for companies!) and last but certainly not least of all,yes rice does contain arsenic like everything else but here's the kicker: Arsenic in and of itself isn't necessarily bad because it's a naturally occurring element (in it's natural state that is!) Rice grown in California and Asia is ok but NOT that which is grown in the parts of the Southern U.S. States like:Louisiana, Mississippi, Texas & Arkansas, because during the Early part of the 20th Century from around 1930 until the late '50's the Pesticide Arsenic(synthesized and artificial and unlike the naturally occurring arsenic which is easily digested & assimilated, the one used to kill bugs is still in the soil and doesn't break down,it's taken up into a plant and cannot be washed off because it's in the plant's cells!) was widely used on all agriculture which was a byproduct from Coal Tar (which was a by product of the burning of Coal-used as a production aid for fuel and heating in furnaces in large Corporations) so the take-away is:Rice in No form is beneficial to Humans but if you do ingest it make sure it's Not from the United States (except for Cali where Arsenic wasn't used to spray on food crops!)...BTW the reason rice is rinsed is that rice like beans and anything that is manufactured in mass production should be washed from foreign debris like grease, trash,microbes & bacteria and also washing does get rid of excess starch when cooked(like spaghetti noodles) causes clumping & stickiness to the individual grains which inhibits fluffiness!😉

I keep both #4 and #5 in my pantry. I don't really like the taste of cauliflower rice. The konjac rice has almost no taste but I prefer it. If you simmer it in a dish for a while it does take on some flavor. It works well in cajun dishes or with chili and as noodles works well with pepper steak type meals.I generally buy it in packs that include, rice, noodles, pasta and more. Most are zero carb and since I only allow myself 12 carbs per day it works well for me.

If you cook rice ahead of time and thoroughly refrigerate it before reheating you will lower its glycemic index.

The frozen riced cauliflower is amazing as a rice substitute for me. Im not crazy about cauliflower, but when its riced it has the same textural qualities as rice without the spikes.

@@mamusita9738 If you live in the USA, most grocery stores carry it in the frozen food section. With the rest of the frozen vegetables. If you don’t live in the USA, I don’t know. But you can make it yourself just by cutting up fresh cauliflower into little pieces.

I'm too poor to shop where they sell pretty colored food and fancy rice. Cauliflower is doable and maybe Basmati rice. 🤷🏻‍♀️ I'm beginning to think that I am just going to die from diabetes because I can't afford the food. 😢 Why is healthy food so hard to acquire? Wheat bread or oatmeal, coffee and 1boiled egg for my breakfast, red or brown rice with vegetables and fish for lunch and 1slice of wheat bread and 1 serving of papaya slice at dinner. My fbs was usually 110 to 120. Then i try eating without wheat bread and rice and its been 2yrs now since i stop eating sweets, rice and bread. My fbs is decrease from 120 to 92 and now 89.

I’m a 21 year old black male. I eat fonio and quinoa. Both complete proteins with a host of other nutrients. I eat oats too. That’s pretty much it grain wise. Fufu occasionally. Rice goes straight to my gut and I feel like it makes me constipated. I’m a light skin black male not mixed. I say that because race gender and genetics play a role in what foods are right for you. The darker you are the more selenium you need in your diet. The easier you sunburn the more sulfur you need in your diet. I stopped eating certain foods and my life changed. I love how fonio can be made as a porridge or as rice or a stew I highly recommend.

Why you guys limit your carb source? So many different low glycemic carbs you do not have to stick to cauliflower. I did low carb, had sweet potatoes, reg potato, yucca root, cream of wheat, oatmeal, quinoa, you have so many different options I never even ate cauliflower.

How can you say reg potato is low carb? If I eat any kind of reg potatoes, it causes my sugar to spike out of sight! I can eat sweet potato, but still have to limit my portions. As for wheat or wheat products, I have to watch my potions there as well. You need to get your facts straight!

In India, you get a millet by the name jhangora rice/ samak chawal/ bhagar. Tastes excellent and has very low GI plus GL. Eating this rice with pulses like green gram makes a perfect diabetic diet. Many such options are available in India. Matta rice from Kerala is a delicious non starch rice. Explore! I eat all these options!

I am from a familkyof diabetics. I am 84 and my random sugar is about 70. I do not eat much rice or wheat but eat barley quite often with lentils. Barley has a low GI and betaglucan too.

A lot of the guidelines here in terms of rice consumption are keeping in mind North American climate. In tropical conditions, one can have much more rice even in diabetic conditions

I think it’s bcoz people in those countries do a lot of physical work daily so they can get away with eating lot more rice. In fact they need those carbs for a quick energy boost to get daily chores done. In western countries we usually have too many amenities that we don’t need to do lot of physical work daily like washing dishes/clothes manually, going to grocery store by walk etc. And hence the recommendation here should be lower.

I’m on keto and IF but still take rice. Nishiki brown rice three times a week. Just 45g dry (per portion) has 32g net carbs and 3g protein. To be fair, I’m not diabetic so I can afford this little indulgence.

I was diagnosed borderline pre diabetes and borderline cholesterol issues. I went on FULL HARDCORE KETO....after only 6 months I was back down to safe levels for both cholesterol and pre diabetes. You have to do it right though and eat 75/80% LOW CARB VEGGIES supplemented with meat protein, eggs and EVOO as your lean fats. GOOD LUCK!

Dry your riced cauliflower in a dry cast iron skillet till it starts to stick, add butter and brown. Great hash brown substitute for your eggs.

Dude cauliflower rice is nasty. I have tried so many recipes to make it "better". While you can get that broccoli fart taste to a dull roar the gross bits are not rice like at all. I'd spend extra on farro and hulled barley to avoid eating that nasty clump of fart
