Fermented Probiotic Rich Rice
Here is a simple flavorful way to use your leftover rice, and to even add to the nutrient value of it.
Ingredients
Leftover steamed unpolished rice
Salt
Your choice of condiments - chopped veggies like carrots, cucumber, tomatoes, capsicum, onions, ginger, green chillies, ginger-chilly paste, pepper etc
Method
Take the leftover rice in a bowl and pour a little water over it so that the water just covers the rice rather than completely drowns it. Cover the bowl and leave it overnight or for 6- 8 hours to ferment in a warm place. Now you can either just stir it and use it or even pulse it in a blender into a coarse porridge texture or any texture that you like. Add in the condiments of your choice, mix and serve. The quantity of the condiments depends on the amount of leftover rice and your preferences.
Because the nutrient value of the rice has increased you may find that this rice is a little more filling than non-fermented rice.
Variations
Replace the steamed unpolished rice with steamed whole millets or other grain.
Serve the fermented rice with any curry, vegetable dish or daal of your choice.
Note: Although fermented foods are rich in vitamin B12, this may not be sufficient for our needs. Vitamin B12 levels should be checked regularly and supplemented if needed.

There are conflicting opinions from plant based docs about what form of B12 to take. Dr. Greger recommends cyanocobalamin because he says there is no data to support methyl. Dr. McDougall says to take any form of B12 because it doesn't matter.
