Quick tip (I've been making my own nutella for a while): more of the skins will come off if the de-skinning/rolling around is done while they are still hot -- you can wrap the bag in a towel so that it doesn't burn your hands. When I roll them around while they are still hot, I get 90% of the skins off and the taste is much nicer.

Have you ever looked into sugar beets to make your own sugar? You can grow them like regular beets in this climate, except they are larger and white. You mash the roots and boil them to extract the sugar and allow the liquid to crystallize. It tastes like raw or unrefined sugar. I have not done it myself yet due to limited garden space but it’s on my “self-sufficiently bucket list” to try since we don’t have proper sugar maples here on the west coast to make maple sugar.

I grew up in the Pacific Northwest so as you know hazelnuts grow wild so we ate lots of them but it never occurred to us to make nut butters. I bought a jar of Nutella when it first came on the market. That first bite had a very off-putting taste and I didn't make it through that first sandwich before I began having a mild asthma attack. I have a number of allergies, mostly to chemicals and food additives. Haven't had it since. Would be nice to make some homemade but living on the East Coast now where they don't grow wild and they are pretty spendy. Thanks for showing how easy it is to make your own.

I stumbled across your channel somehow, and love what I've seen so far! In one video you mention "sub-mediterranean" climate of your location. What is that exactly? Very interested to watch your ocean foraging, as we are soon to be ocean based. Not ideal for complete self sufficiency on food, but we aim to be as independent as possible. One thing I discovered about Nutella is they market these samples size to try out which taste pretty good. So then if one goes buy the big jar stuff and taste it compared to the sample one, you'll notice a big difference in taste. I've lost all respect for this brand.

Nice video... I have thought about making my own peanut butter but wondered if I could. I have a small blender like yours, a Bullet one, and it looked quite easy. I buy peanut butter and then it sits for years... I'm just not a big fan. I would rather eat the peanuts. Making small amounts at a time might work better for me. -- Doyou think there are any minimum amounts to process in a small blender? maybe one cup? half a cup? After blending your two cups of nuts, how much nut butter do you end up with?
@LovinofftheLand3 жыл бұрын
I would say a cup to make it worth while. We did 2 cups and you can see in the Mason jar at the end it didn't get us that much

My bigger issue with Nutella is that they use child and slave labour for the production of some of the ingredients, along with devastating elephant habitat. It's a problematic product in so many ways.

If you have some good full-sun patches, Stevia plants can do amazingly well. You can eat the leaves straight, dry them, or boil them to make a stevia syrup that can keep for YEARS. Its a great sugar substitute.
