There are three reasons to go plant-based: 1. Save the animals. 2. Save the planet. 3. Save yourself. No matter which reason or combination thereof gets people eating more plants, all three are the knock-on benefits. Some channels just don't want the drama in their comments.

As you spoke of factory “farming” and it not being allowed to be filmed anymore, you reminded me of the movie “Soylent Green” where they hid the source of food from the public. We’re there now. Not with animal source in the film (I’m trying not to give the plot away), but we’re so close to that point. It’s unthinkable. Yet here we are. Thank you for your quest to help us, the Earth.

How profoundly, *horrifically* dishonest of you to suggest that. Not *you'll* *get* *assassinated* *by* *a* *government* *operative* The book Soylent Green is based on, was inspired by the theories of a scientist who is still alive and still trying to defend his theories. Even though he has been proven to have been *overwhelmingly* wrong about the effects of human population growth. He's an entomologist. But it turns out *human* *beings* *are* *not* *butterflies* When people point out that his theories were right about butterflies but *astronomically* wrong about people, his defense is "my research was peer reviewed". It's embarrassing to watch. And pathetic. Don't be like him. If you *genuinely* think we're anywhere *near* that point, you're spending *way* too much time on the internet. Thank you for what you said about factory farming. I saw a film about slaughterhouses and factory farms when I was a teen (a long time ago), and I was horrified and that opened my eyes. Haven’t eaten animals since. Factory farms are not only devastating for the animals, they’re not good for people employed in them either.

Derek I really love how pragmatic/real you are about people switching to eating a non-animal diet. Food is one of the simplest pleasures and people will naturally prefer what just straight up tastes really good. Just cook your loved ones, your friends, delicious plant-based meals and you'll gently open them up to at least eating less animal products than they usually do. And your recipes give us a way to do that!

Don't worry about it, Derek. There will always be critics out there, sharing their personal preferences and how you should accommodate them. It's not your job, nor is it possible to cater to everyone's individual preferences. This is your channel, and you get to cook however way you want. Your passion for vegan cooking is what I'm addicted to, as well as your creativity. There are a lot of other whole food vegan KZbinrs out there that I also follow to meet my husband's and my goal in our older years for oil-free, low fat, yet tasty vegan food. We love animals and the earth, and we also love our human animal selves. It's an easy swap for us to do oil free-baking and stir frying with aquafaba, homemade broth with parchment paper in the oven. Can't wait to try out your gorgeous looking tofu & tempeh Italian sausage recipe!

Im going to a wedding in February (mother of the groom here) there will be 150 guests ......148 of them will be consuming steak, chicken & shrimp and various other animal products.....2 of us, myself and 1 other woman are the only plant based eaters.....im appalled...i thought in this day and age the numbers on my side would be much higher.

I restarted my vegan journey a couple months ago even stronger since discovering your videos. You talk about finding the right textures and flavors to be "good enough" and it's completely changed the way I view cooking, especially tofu! I sometimes feel like a massive weirdo buying three (or more) blocks of tofu when I go to the store, but not only is it cheaper than the meat alternatives, I know it's a lot safer to prepare and I can make whatever my heart (and tongue) is craving. I haven't gotten into cooking with mushrooms, but it's on my list to try and experiment with. So thank you for making and sharing videos!

I've been mostly vegetarian due to health issues in an area that veggies available are salad veg and thats about it. I have stayed away from tofu and tempeh because I didn't know what the flavor profile was, what the difference was between them or how to prepare/cook-bake them. Two videos from you and I have an understanding of the ingredients, and my vegetarian meal options have expanded! Very grateful. I appreciate "the ramblings"-I learn something from every single video-I'm a healthier vegetarian. So many people aren't aware of how much flavor a dish has once the meat is removed. Serving any of your recipes is an eye opener and even if it's served on the side in a hearty amount....we know there just isn't a flavor comparison.

Omgoodness Frankie reminded me of my beautiful nonna! Im Australian Italian and raised in an Italian household and can relate to everything you said as an ethical vegan. Thank you for always talking about the animals and not being shy to speak the truth and not making it just a plant based cooking show like so many others. Please don’t be so hard on yourself when you leave the mic off…you deserve better….look at it like it’s a HAPPY accident…it gives you the chance to do a voiceover, and maybe impart even more information and wisdom about your cooking process. For years I have always bought spices whole and used herbs fresh or frozen , it is just remarkable how much better it is. I also love using garlic and onion fresh as well as granulated for super flavor.

That looks amazing! I finally bought some fennel seed for this reason exactly, turning tofu into sausage. The tempeh looked really great for this purpose, too. I usually buy tofu because it's cheap, but the texture of the tempeh "sausage" looked great!

I love tempeh. It's got great texture, absorbs just about any marinade, and freezes well!

Thank you, Derek. I really appreciate all you've shown me. I confess, I am a no-added-oils cook/eater, and it has helped me in a lot of ways, and my taste buds have changed in that I no longer crave it, and I don't miss it. But I do not criticize you for using it. I understand the why. I welcome the challenges of making things w/o the added oil, and most of the time it works just fine. I make a killer spicy Italian sausage much like this that I use with pasta and pizzas, but I use soya (textured soy). 😋
