As I watched this I just cooked off some lion’s mane. Just a small bit that I picked up at TJ’s. I will definitely be looking for some nice big shrooms like shown here. When trying new to me foods, I remind myself that plants generally never have those grizzly nasty bits that animal products have. 16🎉 years vegan and still looking for new foods to try.

Omg I made the lions tail mushroom recipe and the sauce I didn’t have any cilantro so I used basil and I also use the fish off oh my god it’s so good thank you so much for inspiring me in this way this is one happy woman I’ll be making this more and more and more

This looks delicious. I would use something other than sugar. You can puree a natural fruit or sweet beets so this remains a healthy dish.

If you're near a Whole Foods I think they often have clusters and maitake. Not my favorite store in the world, but it might be the easiest way to source them initially depending on where you live.

I live in Northern California, I have found some of the mushrooms at Whole Foods, Sprouts Market and Food Co-ops as well as Farmer's Market. They are hard to find around here, but getting easier.

Cooking for one, I use a medium frying pan on top of the stove. Once they start cooking I press them with a disc type potato masher. Repeat periodically until no liquid comes out. Flip and the bottom side is golden brown. Second side is faster since most of the liquid is gone. Easy to make the rest of the meal. Just cooktop cooking.

Rewatching this one. I just love the action of wiping the bottom of that top pan. Makes me feel so authentic, when I do it. 😏 Pressed a maitake, and tasted the sweetness you always speak of. They have become one of my favorite mushrooms. I also love enoki. Love the chew on those in my ramen. Good stuff here! ❤

Looks incredible! Hope some of the wicked sauces make it to the states eventually. When I was living in the Bay Area was able to get some of your frozen prepared meals from Sprouts and they were so good! (Especially loved the Panang curry with tofu) Keep up the good work! ✊

I’ve always loved mushrooms even since I was a kid - and I still get excited cooking with different mushrooms. I still haven’t tried cooking with lions mane but I noticed my fave mushroom farm sells them at the local farmers market! And yes more growers need to experiment with all different types of mushrooms! we have a great dish in Haitian culture called diri djondjon and it’s one of my fave mushroom dishes - but finding that mushroom is like making a wish LOL. And when you do find it, it’s either wildly expensive or someone brought it back from Haiti for a friend of a friend of a friend 😂

Ha ha, I wish you could be feeding me too. I’m not a vegan yet but working on it. You may say I am vegan in training . I have been a pescatarian for over twenty years. Your videos make me want to eat more plant based. I generally eat fruits and vegetables in their original form or smoothies. Im learning to cook more vegetarian and vegan now. I'm curious to know your preferred brand, or type, of cast iron skillets. Do you go for the standard Lodge, or the higher end, traditional, very smooth Smithey, Lancaster, etc?

Question and a special request. Can I bulk cook these mushroom steaks and freeze them? Plus I would love to see a cast-iron care video since you are the master. I have cast-iron but I'm unsure if I've seasoned them correctly and unsure how to properly clean them. Would love your take on the matter. I just have a quick question: I noticed that you don’t add any flavours such as vegetable stocks, plant based chicken, beef flavours to flavour your mushrooms before you cook them. You mean coconut water, not milk right? My mom uses coconut water to make vegan fish sauce for me. Works great! For those in New England, Mycoterra Farms in Massachusetts grows a couple types of oyster mushrooms, lion's mane, and other varieties that grow easily on blocks. You can buy big block grow kits for the home too. I've been making BBQ oyster mushrooms a bunch lately.

The way you cut them reminds me of tankatsu. Maybe you could even bread the mushrooms, deep fry them and then when you cut them like you are cutting them, you could call them a Mushroom tankatsu. You'd have to fry them separately and then pour the sauce over them I guess.

Thank you from San Diego. You introduced me to lion mane mushroom. I made your steak w them, it looked great but I sensed a little bitter. What made that? Is it the mushroom? Or red wine? Or beet powder? I haven’t figured that out yet. I follows your recipe. It is very expensive here. A small piece at Sprouts is $5.99. So I plan to only make it when I’m craving meat or kabob.

I think something a lot of these types of food KZbinrs lack is transparency and honesty. So with Oyster mushrooms, there's a reason why you see people making them in fried chicken form or with tons of sauce. Like jackfruit, it's very nasty in its natural state.
