What a lovely video you made here Bonita!!! Loved seeing Newfoundland. Oh how I love and miss Canada where I grew up in Welland, Ontario near Niagara Falls and moved to the states. Greetings from Elmwood, Wisconsin! Just picked myself about 29 lbs of wild red/yellow American plums here in our ditches off the side of our country street and boy oh boy I got me 3+ gallons of juice that I put in containers into the freezer to make jelly when I get my jars in order. We had wild plum trees in the yard as a child. Just this summer I canned a bunch of plum jelly. I also canned peach pie filling. I was shocked how easy they were to do. The taste so much better than store bought. Our Grand daughter has let it be known her supply is almost out. I never thought of having it with cream cheese. I will be trying it that way. Yum.

Made your recipe with 6 1/2 cups of juice and mixed one to one with sugar and 1.5 lemons squeezed. Everything was good and it sat up well. It is however super sweet and I would to figure out a way to reduce the sweetness. Thank you.

Good evening Bonita: Hope this note finds you and Raymond doing well. We made this plum jelly today. Ours is yellow plums. We are wondering how long it takes to set. We did the plate test and it seemed right. We didn’t put Certo (Pectin) in ours following what you did and wondered what your thoughts are on that product.

Hi Denise; Thank you for your message and for stopping by, I'm so glad you made plum jelly it is indeed a lovely jelly. You can use pectin or certo if you wish to make your jelly I've used it before for jellies and jams. When making any jelly it takes time and patience because it all depends on the boiling process for when the liquid from the berries or plums boil off, and letting it boil and removing any foam from the side during. It also depends on how much you are making and the amount of sugar to juice ratio. All the best and watch the video again to see the steps. :) Bonita

Hi Karen, Thank you for your message and for stopping by, you need the liquid to run in the jars. First you will do a liquid test by pouring a teaspoon of liquid on a cold plate and if it jells and don't run it is ready to bottle. If you wait until the liquid turns to a solid to would be like rubber in the jar. @@Karen-di4bb Yes you can after they are full, but if you are only making a few and they will be kept in the fridge. You can let them seal on the counter and if one or two is not sealed you can put them in the fridge. I only bottle about 6 jars and sometimes I just put them on the hot stovetop after I removed the boiler and the heat from the stovetop continues to seal the jars. Yum Bonita. I like that you didnt put any gelatin in it. I prefer jams, jellies and preserves without it. I will be canning Gala Apples along with Cinnamon, Vanilla, Nutmeg and Butter this coming week. I am going to leave them sliced as you would for Apple Pie. Getting ready for Christmas Gifts. @@shelleymccrory-martines9906 My dad was a farmer after he retired at a very young age, we helped him in the garden everyday after school until the season was done. My mom cooked and preserved and we did't have to help her, even though I wanted to be in the kitchen not the garden :) lol. But the way I would preserve my apples would be in chunks or wedges so they would be prefect for making apple pies and crisps. Part boil them in chucks or wedges and with cinnamon, brown sugar and cloves, just a small amount of water because the apples and sugar will give off some liquid, then put in your bottles to seal and enjoy all winter long. I followed the wild plum jelly recipe 2 days ago and they didn't jell. The jars are completely sealed. Is there anyway I can save these?

Hi Mike, Sorry that happened and yes you can recook the jelly. Sometimes it takes a day for the jelly to set on the counter top at room temp, without moving the jar. But also sometimes for some reason the liquid while it is boiling takes a little longer to get the the condensed stage. So to start over pour all the liquid from your jars in a measuring cup and you will know how much liquid you have to start with. Now you already adding sugar at the beginning so we don't need as much, only add 1/4 cup of sugar to each 1 cup of juice, or you can add 1 tsp pectin to every 1 cup of juice Now this is up to you, start boiling the liquid again and scooping any foam from the side that develops because thats water and you don't need that. This can be very painful but if you want homemade plum jelly patience is very important. After the jelly starts to boil and NO foam is around the sides, test the jelly by using a cold spoon and bowl, scoop up some liquid and pour along the bowl if it starts to set thats it. But have your jars cleaned agin before starting all of this because you need hot jars, hot liquid and CLEAN the rims before capping. Leave the jars at room temp and DON'T touch them for 24 hours.
