Now is the best time to add color. 1:35 Use fresh fondant. If elephant skin occurs, it can be fixed by rubbing shortening. 1:44 How to measure your cake for fondant 2:05 To prevent sticking when rolling the fondant, dust it with some corn starch or powdered sugar. Corn starch for humid areas and powered sugar for dry areas. 2:18 If the fondant is having a hard time rolling, add a thin layer of shortening to your work surface. Make sure your surface is clean. Fondant picks up debris easily. 2:36 If you have a circle cake, keep you shape circular, if it's a square, roll to square shape. 2:49 Shes using the 16 inch diameter guide on her Wilton map. If you don't have one you can you a ruler or cut a piece of ribbon 3:03 Shes rolling ⅛ inch thickness. We can use guide rings but the chart will help us if using the correct amount of fondant. 3:13 Roll from the center outwards never completely over the edge. Doing that makes the edges thinner than the middle. Roll in every direction to keep that circle and keep lifting your fondant every once in a while to prevent if from sticking. Notice she keeps using her hands to see if the fondant is even and has any uneven spots that will need rolling while keeping the shape. If at any time it gets misshapen, try to round the edges back to the circle. 3:38 If you get any air bubbles, pop them from the side using a pin. It's best to deal with air bubbles now than when it's on the cake. 3:48 Even though you only need a 16 inch piece of fondant, dont be tempted to roll a bigger piece. Definitely dont do this. The fondant will stretch when you drape it and the excess fondant will add weight which may cause it to tear. 4:04 You must place fondant on your cake while its still fresh and pliable because when it becomes dry it will be harder to smooth. 4:13 Check on your cake before adding the fondant. If the buttercream is dry, spritz it with some water for moisture as the fondant will need a sticky surface to adhere to. 4:20 APPLYING FONTANT. *HAVE THE CAKE CLOSE TO YOU AND READY TO GO* place the roller in the middle of the fondant and gently guide it over. Fold one side over and pick it up from both ends. 4:31 Start away from yourself. Center the bottom edge of the fondant to the cake, touch the edge of the cake board and make sure you have it centered. Gently roll the fondant roller out to guide the fondant as it drapes over the rest of the cake. 4:43 You might find that the fondant is not fully covering the bottom edges of the cake but dont worry, as you smooth, the fondant will stretch out a bit and cover the edges fully. 4:53 If you realize it isn't centered, before you adhere the fondant you should be able to gently remove it and recenter. 5:00 If you cannot safely remove the fondant without damaging the cake, just re ice the cake and refrigerate until it's firm. 5:07 if you have excess buttercream into thefondant, just knead the buttercream into the fondant and re roll. 5:12 To smooth the fondant, use a combination of you hands and a fondant smoother. First use the fondant smoother on top of the cake to smooth and adhere the fondant. 5:20 Pull and very gently stretch the fondant away from the cake and using the edge of your hand to get rid of any creases. 5:30 If you find the sides of your fondant are not sticking to the cake, dip you hand in some water and rub in under the fondant to help adhere. Then, gently press the cake with a dry hand. 5:43 Once you get to the last section, loosen on either side, pull it but more and move the draping to the bottom. You want to move the creases to the lower end of the cake. 5:53 Cut of the excess as you work. Use the smoother on the top and the side once more making sure the fondant is sticking. 6:00 Then press the fondant towards the cake board to get a perfect edge. 6:05 Once the cake is completely covered you can place It on a smaller cake pan so it's elevated and you can cut off the excess HELPING ERRORS 6:20 To hide a seam or where two pieces of fondant were attached together, gently press and rub the two areas. 6:28 To heal fondant cracks or tears, you could always try fondant spackle. Create a thin pipable paste by adding water to fondant to fill in the cracks. Take a spatula and lightly smooth. Shine will disappear when the water evaporates. 6:46 What's the correct temperature to store a fondant cake? Room temperature for 2-3 days before the event however she prefers to refrigerate once she has the fondant on so that the butter cream or any fillings that need to be refrigerated needs to stay cold. 7:03 Dont touch a sweaty cake, the condensation will reabsorb into the cake once it's been at room temp for a while. going to have a go today for the first time on boxing Day 2022 normally I use royal Icing but getting fine enough sugar in spain is difficult and very expensive ( 6 euros per kilo! Fonday 2.99!) as against fondant which seems to be everywhere.... thanks for the tips...

Hi there! We would not recommend refrigerating fondant-covered cakes as the humidity could cause the fondant to sweat or move!

Hi Krista, we would not recommend putting a filling on top of a fondant-covered cake. You could put the filling inside so long as it is shelf stable and does not require refrigeration. Have a great day!
