One of my favorite parts about traveling through Thailand was trying all the different local variations of Som Tam. Some were spicy and fragrant, others were sour and funky. I love them all.

In my opinion….this is the most craveable dish in the world. Once I start thinking about papaya salad my mouth waters so much that I just have to eat one. I can not imagine being able to wait overnight to eat it. As always I love that you include apple in your recipe. 🥰

Som tam was my biggest culinary discovery of all times. I devoured kilograms of it whilst in Thailand. Add some sticky rice = absolute divinity. I haven't found green papaya as of yet over here, but I've done it with spiralized cucumber and carrots. Looovely.

In Thailand we have fruit salads. We use corn, grapes, apples instead of papaya, and fish sauce instead of soy sauce. We also pound all the ingredients in a mortar instead of mixing them. Additionally, if you change from papaya to raw mango (sour), add sliced shallots (without nuts, lime, basil, mint, ginger) you'll get "mango salad", which is perfect to serve with jasmine rice and fried fish. (or fried tofu). Hope you like it :)

I made this salad today and it is DELICIOUS! I can't wait to have more tomorrow because I know it will be even better. I can't wait to try making this salad today! It is one of my favorite salads on the planet! One little crunch that we love to add to ours is to buy the tiny frozen anchovies( any good asian market) and quickly deep fry them till golden....draining on a paper towel...before topping on the salad. It's a lovely salty crunch to add for many salads! Thank you for a beautiful, relaxing video...you have a lovely voice and speed with which to teach us!

What a great method for shredding the green papaya, Wil. I’ve often resorted to my mandoline which does an ok job - certainly not like yours though! There is a busy but humble little Thai restaurant in Hong Kong’s Pacific Place mall on the 1st floor called “Thai Basil” that serves a great version of this (and an even better pomelo salad as well) that are quite extraordinary. I’ve learned that most Thai restaurants add fish sauce to these salads, so make sure you request no fish sauce whenever & wherever you order them. Have a great Sunday up there 👆, Wil! 😎

This is the traditional way of shredding papaya in Thailand, where papaya salad is practically the national dish. Funny story... I was on a snorkeling trip in Thailand and we were served standard tourist food like bland fried rice, fried chicken, pineapple and watermelon. I noticed the kitchen staff were still preparing food and I asked what they were doing. I was told they were making their own lunch and with all smiles, they invited me into the kitchen. Rather than eating the crap they had just made for the tourists, they were making papaya salad. They let me try their papaya salad and taught me how to shred the papaya using a knife. (I don't remember anything about the snorkeling.)

@@belle3168 I also remember seeing the Thai aunties on the side of the street, gossiping with one another and not even looking down at the papaya in their hand while they hack away at it with their scarily huge knives. I'm sure most of them got a nasty cut way back when but rather than going the glove route, they simply developed mad skillz. I generally prefer the texture of knife cut papaya to using a grating device, but I have to admit that I'm lacking in both skill and patience and often resort to using a grater.

Does your mandolin have different julienne options? Watch any Thai street food video where they're making this common street food dish. It's normal for them to not be wearing gloves and using this method to shred papaya. Holding the knife properly, paying attention while you're learning the method, getting into a rhythm, practice and experience can make you as good or better than any machine and here there is variation in the shreds which makes for more interesting texture. Hot Thai Kitchen has an amazing authentic green papaya salad that I make and it's absolutely delicious.

There’ a Thai tool called. Kiwi (I know - weird) that shreds papaya perfectly. No need for knives or gloves. Also saves bucket loads of time. Easily available online, and cheap. Do yourselves a favour…

Here in my Thai village and throughout Thailand, you will find that we pound all the ingredients together. It is made instantly fresh for our customers. Papaya, is known as Malagor in Thai ! "Palaa" the fish sauce, IS an acquired taste, but tell your chef to leave it out beforehand, so that it can be made to your taste ! I like it SPICY I know when it is spicy enough, when my nose and eyes, are running copiously ! Enjoy ! Take care, stay safe ! Stu xx

In Vietnam, they don't pound the papaya down. They dress it like he does. I grew up eating various versions of it in Laos even though my family is Vietnamese...and yes, we pound it down in Laos. LOL!

I absolutely love this especially on Thai streets. I had variations with sprouts and sometimes crab and octopus mortared and pestled into the salad. Very unique and very tantalising dish from Thailand. Paired with a chilled beer on Nai Harn beach, delightfully good.

I love papaya salad, I use to buy my fave one in a Hmong Marketplace, she make it the way I love it, she adds fresh crabs to it and raw sliced round eggplants and race sliced green string beans. The sauce though is not soy sauce, or with honey, she puts on fish sauce and lime. Thanks for this tips I will absolutely try it myself coz the place where I buy them she is gone, they make it different.

Violet this is the recipe,,,She cut the green papaya and let it dry for a day or two then she will cook it with a little bit of water and sugar then when it was cook she add a little bit of baking soda to help caramelize the papaya then he let dry in wax paper it was so good 😊

I made this last night, and it was fresh and wonderful. A couple comments/thoughts: - I wonder if there's another method for the shreds - maybe do the chopping on the papaya and then use a potato peeler to get the shreds? That part felt like a LOT of work, and my ability to keep my knife shallow enough for fine shreds wasn't great. - 25G is a LOT of basil and mint, and it's unclear to me if that is intended to include the leaves and stems or just leaves. I wound up using a small "bunch" of Thai basil from my H-Mart and a similar amount of mint (from my yard - lol). Looking back at the video, my piles of basil/mint look roughly proportional to yours, but they didn't weigh out to 25g (on my coffee scale, which is accurate to 0.1 grams. I also roughly chopped both to spread their goodness into more bites :) - It isn't clear how many servings this was, and since I was serving 10 people as a side dish, I wound up doubling the recipe (2 green papayas worth of shreds). That wasn't necessary - one would have been plenty. The good news is I have leftovers and it's even better today than last night! - On that note, it seems like making the dressing the morning of or night before, giving the peppers and ginger time to infuse, would be an excellent idea. - I bought and used raw peanuts, and it turned out great. Some specificity there would be a good idea. In the video they don't look raw, but guessing they're tasty either way. Thanks for a great recipe!

I've seen other chefs recommend the papaya shredder. They're usually incredibly dull causing people to cut themselves. The knife was the safest bet and I'm glad you're teaching that method!

Looks infinitely more delicious than the one I had last night at a Laotian restaurant. The dressing had so much fish sauce in it I thought I was eating at Long John Silvers.

hello ymcooking, thank you for this episode of papaya salad - was watching it with new york ska-jazz ensemble music and wondering from thai cooking is there a favorite restaurant in nyc or san francisco (oak/sj) area that you eat at? thai restaurants have not opened across from nyc to sanfran similar to pokpok from portland to brooklyn. your papaya salad is yum to eat :) - you still have to eat out :) el0

love this salad, I pound the small stuff in a salad mortar and I do add fish sauce, essential IMO. There are vegetarian varieties of "fish" sauce, I have not tried any, but some seem to be pretty good and close in flavor of the real thing. Best I had was at a great Thai restaurant in Volcano on the Big Island, very traditional and if you asked for spicy, you got Thai spicy, not American spicy. We went for not so spicy and it was still quite hot, but not so that it burned all the flavors away. Gonna make it again as soon as I get my hands on a green papaya again.
