My mother taught us this recipe . She was a home ec teacher. Graduated in 1949 . Her lemon meringue pie was raved about by everyone and I think was what won my father’s heart!❤️ thank you for putting this out here

I am 70 years old and have always used vegetable shortening for my pie crusts with always good results. I am famous for my lemon meringue pie. That being said, I am anxious to try this oil pie crust rolled out between two pieces of wax paper. It looks good, wish I could see the finished cooked pie so I could see if there was any shrinkage. Who says you can't teach an old dog new tricks! Love it.

If you have parchment paper, that works even better than wax paper to roll it out with (especially for 9" or larger pies. My sister uses this recipe for her lemon meringue pies and they are yummy! Unless you put in too much oil and if feels really greasy in your hands, you won't have much shrinkage. We pierce the crust with a fork all around the sides and bottom. You could also blind bake the crust with baking beads or beans or whatever if you are worried about shrinkage. Getting the fluted edge right up on top of the edge of the pan (not halfway down) helps the fluted edge stay put as well.

Lemon Meringue Pie: 1-1/2 c. sugar 3 Tbsp cornstarch 3 Tbsp flour Dash salt 1-1/2 c. hot water 3 slightly beaten egg yolks 2 Tbsp butter or margarine 1 tsp. grated lemon peel 1/3 c. lemon juice 1 9-inch baked pastry shell, cooled Meringue (3 egg whites, recipe below) In saucepan, mix 1-1/2 cup sugar, cornstarch, flour, and salt. Gradually add hot water, stirring constantly. Cook and stir over high heat till mixture comes to boiling. Reduce heat; cook and stir 2 minutes longer. Remove from heat. Stir small amount hot mixture into egg yolks, then return to hot mixture. Bring to boiling and cook 2 minutes, stirring constantly. Add butter and lemon peel. Slowly add lemon juice, mixing well. Pour into pastry shell. Spread meringue over filling. Seal to edge. Bake at 350 degrees (180 C) 12 to 15 minutes. Cool before cutting. Meringue (use following suggestion): For one 9-inch pie: 3 egg whites (room temperature is best) 1/2 tsp vanilla 1/4 tsp cream of tartar (optional) 6 tbsp sugar Beat egg whites with vanilla and cream of tartar till soft peaks form. Gradually add sugar, beating till stiff and glossy peaks form and all sugar is dissolved. Spread meringue over hot filling, sealing to edge of pastry. Bake at 350F (180 C) 12 to 15 minutes, or until meringue is golden.

My grandmother taught me to make piecrust with Crisco shortening. I switched over to all butter crust. They are hit and miss: sometimes really nice and flaky and other times...not so much. I'm excited to try your oil method! I'd love to have a more reliable crust. Do you recommend a particular brand of oil? Thanks

Here's my report : I tried this recipe last night after watching the process about 5-6 times. I then proceeded to make a deep pan SALMON QUICHE and the crust was CRAZY GOOD...omg. Flaky...soft...very chewable...easy on the fork...just EXCELLENT. This is officially my "GO TO" crust. I've been on KZbin for WEEKS looking for the right/best/perfect crust...and this is it. Made my first ever pie crust tonight with this guide and it was very easy and turned out awesome! I did two 10" pasty/pot pies with each having a top crust, the filling (venison roast, onion, potato, carrot and garlic) was done in a crockpot ahead of time. I made the bottoms with one batch (2 crusts), filled both, then made the top crusts for the 2nd batch. I put one in the freezer and one in the oven at 375 degrees for 19 minutes and turned out awesome golden brown, flaky crust! Awesome video!!

Thanks for your kind words. I currently use parchment paper instead of wax paper because it is bigger and works for those 9" pie tins. Also I tend to double the recipe for three 9" crusts (one double, one single or three single crust pies) because the standard recipe was originally for 8" tins (like Marie Callender tins). I love the fact that it is quick and easy and hard to ruin! Glad you like it too!

The easiest crust I have seen by far. I was taught as a child and hated it bc of all of the rules to not have a tough crust, dont handle too much, not too much water, the water had to be ice cold, and so forth and so on. As a result, l didnt bake pies. This recipe is perfect and I can look forward to baking for the holidays again. Thanks for sharing.

I like this oil/milk pie crust the best. I like how this lady shows how o get the wax paper NOT to STICK to the crust. Her method was great. I've been frustrated with this problem. Also, her method makes very little mess. Great ideas...

The best crispy flaky pie crust ever. Browns nicely because of the milk. I tried it with buttermilk and it was delicious. If you don't have wax paper, use parchment paper or even a sturdy plastic bag cut into two flat pieces. I always double the recipe and make 1 one crust pie and one two crust pie from that amount.

WOW! Finally I made a pie crust that taste great and didn't have to spend a lot of time! I pre-baked my apples in the convection oven. While those were baking, I made the Winter Family Crust. Then put it all together and put the pie back in the convection oven for 15 minutes and DONE! THANK YOU!

I followed this video to make an apple pie. I didn't spend much time fluting the edges pretty but it was good enough for the immediate family. I liked rolling out the dough between wax paper and how easy mixing the dough was. Tasted great!

I wanted to let you know how pleased I am with this crust. I made two single crust pies and really couldn't tell the difference in it and my "go to" butter and lard crust made by hand. My only complaint is it was too thin for the 9" pies so next time I'll make double and freeze the leftover for later use. Thank you for sharing this very worthy recipe and family secret! Hi Perry, there of course is a difference...the lard and butter based crust is lighter and flakier....but having said that, this oil based crust is really good. I've tried other oil based crusts that were not good at all. This oil based crust takes all the worry out of over mixing and over watering. For the beginner OR if you're just in a hurry....THIS is the worry free crust to use. Start with this one Perry and then try the lard and water. This one will save you a lot of "beginners" frustration. I'm using this for my holiday pies. I shouldn't have said I couldn't tell the difference...there IS a difference but, left behind is the time consuming and worry it won't turn out as well as you wanted it to. I hope I've clarified it for you. Merry Christmas!!!

Since I am usually making more than one pie at a time, I usually double the recipe and it makes a two single 9" pie crusts with either some you can roll out and put on parchment paper with cinnamon sugar (pierce it with a fork) for the kids to nosh on or a generous 10" double crust pie. Sometimes I even quadruple the recipe!

I tried this pie crust this morning, and it was wonderful. It was very flaky. I am amazed. I tried making pie crust with butter and shortening, and they were nice too, but not as nice as this recipe. Thanks for sharing.

It makes a wonderfully flaky pie crust. Mrs. Winters does a beautiful job with her 8-inch two crust pie plus crimping. I find that it takes practice and experience to use this crust because it breaks easily and messy to try to patch. If you get that far the crust when baked is forgiving of the patching. I think I used an egg wash on mine for nice browning or maybe milk will do just as well. It’s been awhile since I did this crust but it is nice and so flaky.

I have tried this recipe several times - both without an egg and with. The crust does indeed hold better and is more flakey and easier to bind and work with using one egg. This is a terrific "go-to recipe," but needs the egg for sure. Thanks for sharing...

The addition of an egg would make the crust sturdier and a bit more bready...so if that is what you want, then great!

It does, although you have to be very careful because it is fragile. We cut up the strips and use a table knife to transfer to the pie.

This is a great video with such detailed and informative instructions! I am going to try this recipe right away! I have made my own crusts with Crisco, ice water and salt but they are still tricky and don't always come out no fail! It has always been a very tense affair for me to make pie from scratch because of the finicky crust!!

i have a fail-proof egg pie crust similar to this but instead of milk, i use ice water and add some sugar and less salt. but your technique about the wax paper has given me the confidence to make them years ago when i watched this video. and since then, i managed to bake so many pies, i've even been able sell them on the weekends for extra bucks, too! in my country people use the traditional pie crust recipe and when people try my pies they always comment about the unexpected but pleasant taste and texture of this particular crust. it really goes well with custard topped with meringue, you guys should try it!!!
