Hi Wendy, could you pls explain the role cornstarch plays in pie dough? Would it make the dough more plaible n easier to weave the lattice? I love lattice tops but they make my life miserable. Also, can I add an egg yolk to this recipe ?

The cornstarch reduces the gluten & helps make the pastry more flaxy.

My dough starts to melt and break even before I finish rolling it out fully. Anything I can adjust in the recipe to compensate for slow speed and hot humid weather.. 91F

Not so much work if you use ready rolled pastry... Sweeten with a little caster sugar mixed with a teaspoon of cinnamon and roll over the top of your pastry sheet. This works well and is less time consuming... If time is your problem.
