I've ate beaver backstraps several times and they are good. But beware you have to cook the beaver WELL DONE! They can carry trichinosis.

Must be a hobby trapper or weekend trapper otherwise Troy would be skinny. Beaver that are caught and killed in conibears or diwn a drowner has the blood in the meat making it nasty. Eat the ones alive and properly bled, huge difference in taste
