The bannock recipe we are using comes from Connie and Lonnie of Far North Bushcraft & Survival. We're making two recipe changes: Adding 1 tsp of sugar, and adding more water. It's super easy and tastes yummy. You can change it up by adding different spices like Italian seasoning or pepper. The bannock is also good with toasted pine nuts or sunflower seeds. Fresh blueberries are also incredibly wonderful in it.

WOO's BANNOCK RECIPE
1 cup flour
1/4 teaspoon salt
1 teaspoon baking powder
2 tablespoons powdered milk
1 teaspoon sugar
hot water
Directions: Mix the dry ingredients. Add hot water to make a dough of the consistency you want. For the fluffy bannock we add water until the consistency is like a very thick batter (as seen in the video). Fry in butter over medium to medium-high heat until it is golden brown. Flip and cook until the second side is also golden brown. For this fluffier bannock, be sure to heat it long enough for the dough on the inside to cook throughout.

I used your recipe over a campfire in the high desert of New Mexico and it was Excellent . My mule Samson also likes your bannock recipe very much... with honey . Love your video and love the music . All the best to you and yours . Lefty

Nice hot butter dance! You forgot one of the main ingredients, cast iron! Bannock always tastes better out of a cast iron pan. All kidding aside, I like to add some extra old cheddar in my bannock. Happy trails folks.

Instead of bannock bread, try skillet corn bread. Mix 1/2 cup corn meal with 1/4 cup "Instant Pancake" mix (2:1 ratio). Add 1 spoon sugar and a pinch of salt. The instant pancake mix is a binder for the corn meal and allows it to rise. Then add enough water to form a thick batter just like your bannock bread. Cook it the same way in the skillet.

Ooo! Sounds wonderful. Something we've tried along that same line is to use less water and roll out the dough. Then mix cinnamon, sugar and butter together and spread it on the dough. Roll up the dough and form it into a closed spiral. Flatten it out a little and cook it in a frypan. It makes a nice large cinnamon roll.

Bannock is not a flatbread, it is a baking powder quick bread. I've been making bannock for years in almost every variation.

If you put a lid on the pan would it cook faster or would it make any difference ???

Good question. It would probably cook faster with a lid on the pan. I do like a bit of crusty outside to the bread. If using a lid, the steam/condensation that forms on the inside of the lid and stays in the pan, may make the bread more soft than crunchy. That certainly isn't a bad thing - just different.

This recipe is screaming for blueberries wild hucklberries, brown sugar and cinnamon, with walnuts mixed in the dough.

Ooooo, yes! That sounds amazing! I definitely want to try your version! Wild huckleberries are the bomb! I've made the dough with less water and rolled it out and made cinnamon rolls with it before, and that worked quite nicely too.

Why don't you use any shortening in your mix? Most bannock recipes I've seen add it. Is it better without for some reason? Thx.

There's no purposeful reason for our not using shortening. The recipe we reference didn't include shortening, and we hadn't considered adding it... until now. 😁 Guess it's time to give that a go.

The texture of it is more like a heavy bread. It doesn't have the more fine texture that a pancake does. It can definitely be mixed with less water. It seems many folks aren't liking the fact that I used so much water.

You're welcome. Yes, if you use all purpose flour you will need to add the baking powder and salt. All that's in the all-purpose flour is - flour. Happy bannock making.

I like to use butter. If mixing black pepper and Italian seasoning in the dough, I like to cook it in olive oil.

I use the same recipe, but without the toxic nonstick frypan that will stick eventually and needlessly fill the landfill.

Cornbread in a cast iron skillet is my favorite campfire bread. I like to add a bit of sugar to my bread recipes too!

I used let oil and I was able to do one of those packcake flips instead of using a spatula. I tossed cheese and meat on top!

Go you.. Nice job on the pancake flip! The meat and cheese on top sounds yummy! We've used the bannock as a thick pizza crust and it has been pretty good like that too.
