∙4 Hake fillets
∙Canola oil for frying
Gourmet batter
∙1 cup White bread flour
∙½ cup Cornflour
∙1 ½ cup Tonic water
∙Pinch of Onion powder
∙Pinch of Garlic powder
∙Panko bread crumbs
Traditional batter
∙1 cup White bread flour
∙½ cup Cornflour
∙¾ teaspoon Baking powder
∙1 teaspoon White vinegar
∙1½ cup Water
Tartar sauce
∙½ cup Mayonnaise
∙½ cup Sour cream
∙2 tablespoons capers
∙2 tablespoons fresh Parsley
∙3 Pickles
∙Salt & pepper to taste
∙2 tablespoons Lemon juice
∙Lemon zest
Harissa sauce
∙130 grams Harissa paste
∙1 Garlic clove
∙½ cup Sour cream
∙½ cup Mayonnaise
∙Salt & pepper to taste
*Fry fish 3-5 minutes per fillet @ 170°C
