Method 1. Add the yeast to the lukewarm milk, (you can heat the milk for 45 secondss in a microwave beforehand), mix gently and leave for 5 minutes for proofing. 2. In a mixing bowl, add the bread flour, salt, sugar and mix with a whisk. Then add the whipping cream to the dry ingredients. Add the egg and the yeast mixture to the bowl. 3. Mix until the dough comes away cleanly from the sides of the mixing bowl and remove it. 4. Mould the dough with your hands until it resembles a ball. Place it back into the mixing bowl and cover. Leave the dough to rise at room temperature for 60 minutes or until it has doubled in size. 5. Chop up the cranberries and place to one side. 6. Grease the base and sides of the pan/baking tin with oil/butter and place the baking parchment/paper inside the base of the pan. Also grease the baking paper. 7. When the dough has doubled, place on a floured surface and divide into 5 equal portions. Take each portion, gather edges and roll into a ball, then cover dough balls with cling film/saran wrap to prevent drying out and let the dough rest for 15 minutes. 8. For each ball, roll out into an oblong shape, approximately 21 cm in length and a ¼ inch thick. From the middle of the dough outwards, cut just one side only into small strips, approximately 3-4 mm wide, use a dough cutter/pizza cutter/knife. On the uncut side of the dough, place 1/5th of the chopped cranberries. Gather up the uncut sides of the dough to stop the fruit from falling out and roll up and over the strips of dough, to form a rectangular-shaped roll. 9. Place in the baking pan around the edges, equally spaced. Cover with film wrap and leave the dough to rise/proof at room temperature for 60 minutes or until it has doubled in size. Remove film wrap and brush the top of the risen dough with fresh milk. 10. Place in a preheated oven for 17-20 minutes or until golden brown.

Add 3g yeast to 80 ml lukewarm milk and let proof for 5 minutes Add 300g bread flour to bowl Add 5g sea salt, 30 g sugar, 100ml whipping cream, 1 egg, and the yeast/milk mixture Mix until it becomes a soft mound of dough Proof the dough in a covered container in room temperature for 60 minutes or until the dough doubles in size Chop 50g cranberries (or whatever filling you will be using) Grease the baking pan and line with parchment paper (and grease the paper, too) Sprinkle flour on kneading surface and roll out the dough Cut into five pieces Fold into a ball Cover with saran wrap and let rest for 15 minutes Roll out each ball and mark half of it with lines Add your filling and roll it up, while folding in the sides Place each rolled up ball in the greased pan Proof the covered dough in room temperature for 60 minutes or until it doubles in size Brush with fresh milk Bake in preheated oven for 170 c or 340 f for 17-20 minutes

Hi, I made this last night and it was amazing. I made a few tweaks as suggested as I did not have cream but I filled each alternative section with either red Pesto or garlic butter and it was really good with a pasta dish. I also reduced the sugar and brushed the top with melted garlic butter instead of the milk. Thanks so much for the brilliant inspiration

I happen to like my Kitchen mixer very much because I can rock out four dozen cookies in less than an hour. My beau would make cookies by hand. He teased me and said he put love in his cookies! He wasn't tasked as often as I was to cook, though! He loved my cookies, too.
